Every tried out Dhaba style Vegetarian Frankie : Popular Indian Street food ? Very popular Indian street food which can be prepared at home.

Back in India, we used to try out different street food , and Mumbai is a place where you get different types of food on dhabas(Small stalls), right from street noodles, sandwiches, pav bhaji to tawa pulav, bhel puri, pani puri , vada pav, you name it. A person living in Mumbai can survive just on street food which is not only delicious but anybody can easily afford them. I am not saying that it is totally healthy , but of course there is no harm to enjoy it once in a while.  And no doubt , there is a certain charm to eat on dhabas , sipping a hot cup of cutting chai.

Frankie is one among the popular street food originated from the vendors of 1930’s Old Mumbai. Flat bread of whole wheat or all purpose flour is prepared and stuffed with vegetable or chicken patties, lots of onions and seasoned according to the tastebuds of the individual.  So, basically you can call it Mumbai burrito. 

Though Frankie is a snack, I often prepare it for lunch or dinner whenever we want have something light.  

So, here is the step by step recipe of Vegetarian Frankie.

Preparation time: 40 Minutes

Cooking Time: 20 Minutes

Yields : 6

Vegetables:

• 2 Medium sized Potatoes
• 200 Grams Brocolli
• 6-8 Baby carrots
• 1 Big onion , thinly sliced

For Tikkis / Patties:

• 1 to 2 green chilies , finely chopped
• 1/2 Teaspoon Dhania Powder/ Coriander powder
• 1/2 Teaspoon Jeera Powder/ Cumin powder
• 1 Teaspoon Grated Garlic
• 1 Teaspoon Grated Ginger
• 2 Green chilies , chopped fine
• 1 Tablespoon lime or lemon juice
• 1/2 Teaspoon Chaat masala
• 2-3 Tablespoons chopped Dania / Coriander leaves
• 1/2 Cup Semolina or bread crumbs for dusting
• Salt as required
• 2 Tablespoons oil for shallow fry

 Curd/Yogurt Sauce:

• 1 Cup whisked Curd/ Yogurt
• 1 Tablespoon chopped Coriander leaves
• 1/2 Teaspoon Chaat masala
• 1/2 Teaspoon Cumin Powder
• 1/2 Teaspoon Red Chili powder
• 1/4 Teaspoon Salt 
• 1 Teaspoon Sugar(adjust according to how sweet you want)

For Roti:

• 1 1/2 Cup whole wheat flour + little extra for dusting
• 1 Teaspoon Oil
• 1/2 Cup water
• Salt 

Extra Ingredient:

2-3 Tablespoons Ghee (Clarified butter) to apply on roti

Method:

Mix together whole wheat flour, oil and salt in a big bowl and keep adding water little at a time. Mix and make a soft dough.

Cover and keep for 30 minutes.

To make Yogurt sauce: 

Mix together the ingredients mentioned for sauce in a small bowl and keep aside.

In a saucepan or pressure cooker, cook all the vegetables mentioned till they are very soft.

Remove them out. Peel off the potatoes and mash all the vegetables well with fork or potato masher. 

Add green chilies , Coriander powder, Cumin powder, Grated Garlic, Grated Ginger, Green chilies,lime or lemon juice,Chaat masala,  chopped  Coriander leaves and salt in the mashed vegetables. Mix well.

Make small balls about the size of a lemon and slightly press them to make nice and smooth Tikkis or patties (discs). If you feel that the mixture is sticking on you palms while making balls, apply little oil to your palms while making balls.

Once all the tikkis are ready, Heat a skillet. 

Dust all the discs with semolina.

Add about 2 tablespoons oil on skillet and spread it or brush it evenly. 

Arrange all the tikkis on the skillet  and fry them on medium high heat until crisp on both the sides.

Remove them out on a plate lined with paper napkin to absorb excess oil.

To make rotis:

Make small balls of the prepared dough about 2 inches in diameter . 

Heat a skillet .

Dust them with flour  and roll into a thin roti or a disc . 

Flip on to the heated skillet kept on medium high heat .

Once you see small blisters coming up, flip it and cook on the other side.

Once both the sides are nicely cooked, remove it out on a plate , apply some ghee on both the sides and cover. 

Repeat for the remaining.

Lets Assemble Frankie:

Take 1 roti on a plate and arrange 2-3 veggie patties .

Sprinkle some yogurt sauce on top and garnish with sliced onions.

Fold it and press a toothpick in the center .

Enjoy your veg frankie with some yogurt sauce.
