Three Milk’s Cake or Pastel de Tres Leches is one of the popular traditional Mexican desserts been enjoyed throughout Mexico . This moist cake is sweet and wet because of the milk sauce poured over it and tastes delicious. Authentic tres leches cake recipe includes three milks : sweetened condensed milk, evaporated milk and the plain milk , but some people do the variations by substituting regular plain milk with heavy cream.
This is a easy cake recipe and is usually topped with whipped cream. Of course the topping can be anything depending upon your choice., but it goes well with whipped cream and a strawberry.You can even totally skip the topping. It still tastes really good.
The main key in this Cake, is to make the cake spongy,and for that, the egg whites should be beaten really well to get soft peaks and then after adding sugar, again beaten well to get stiff peaks.
So let us start with this easy quick homemade cake recipe.
Preparation Time: 35 Minutes
Bake Time: 20 Minutes
Ingredients for Cake:
- 5 Eggs , Separated
- 3/4 Cup Sugar(Divided)
- 1 Tablespoon Salted Butter(Softened)
- 1/3 Cup Regular Full Fat Milk
- 1 Teaspoon Vanilla Essence
- 1 Cup All Purpose Flour
- 1 Teaspoon Baking Powder
For Milk Syrup:
- 1 Can (12 Ounces) evaporated milk
- 1 Can(14 Ounces) Sweetened Condensed Milk
- 3 Teaspoons Vanilla Essence
- Heavy Whipping Cream(Optional)
- Few Strawberries (Optional)
How do we get soft and moist cake ?
Refer to the ingredients mentioned for cake and follow the instructions given here.
In a big bowl, beat egg yolks at high speed for about 2-3 minutes till it becomes nice and lemony colored.
Slowly add sugar and butter into it, and beat till well combined.
Stir in milk and vanilla.
Sift flour and baking powder in a separate bowl and add this to the prepared wet mixture. Mix with spatula really well. There shouldn’t be any lumps.
Now the next part is important for the cake to be really soft and spongy.
Wash your beaters really well and beat egg whites in a separate bowl on medium heat till soft peaks form.
Then add the remaining sugar ( that is 1/4 cup ) and keep beating on high speed until stiff peaks form..
Pour prepared flour batter into this mixture and cut and fold.
At this stage, do not beat with the beater. Just cut and fold until well combined.
Spread evenly in a 13 inches x 9 inches baking dish, greased with oil and dusted with some flour.
Bake it at 350 degree Fahrenheit preheated oven for about 15-20 minutes. or until cake springs back when lightly touched.
Place the dish on a cooling rack.
Now let’s prepare the yummy syrup:
In a saucepan, combine condensed milk and evaporated milk and let it come to boil.
Keep the heat on medium and stir continuously for about 2 minutes.
Remove from heat and add vanilla .
Cut the cake into small pieces around 12-15, leaving cake in the baking dish.
Poke holes in cake with fork.
Slowly pour half of the syrup over the cake, allowing it to absorb into the cake.
Wait for few seconds and repeat for the rest of the syrup.
Once the cake is nicely soaked, cover the dish and refrigerate for at least an hour before serving.
Serve the pieces by topping them with a scoop of whipped cream and a strawberry.
Note: This cake has to be refrigerated and has to be finished within 2-3 days.
