Red Lentil Curry Without Coconut
Whole Brown or Red lentil curry is one of the best choice especially for vegetarians and goes well with rice or any bread.
Yesterday I was not in the mood of non vegetarian food and wanted to make something healthy for dinner. Normally I use coconut for any kind of Indian curries. It’s but obvious because being Goan by origin we put coconut in most of our dishes. But whenever possible ,I make an effort to avoid Coconut nowadays and instead substitute it with tomatoes and lots of onions .

Earlier I was thinking that for every curry you have to use coconut. In Goa we prepare a very famous brown lentil curry in which lot of fresh grated coconut is used. But last week I modified it without using coconut and with a little twist . It really became tasty , so prepared it again yesterday and I couldn’t wait to post the recipe of this rich ,creamy and full of nutrition Red Lentil Curry. Let’s see how to prepare it.

Ingredients :Â
- 1 Cup Red Lentils
- 1 Cup Chopped Tomatoes
- 1 Medium Onion, sliced thin
- 2-3 Cloves of Garlic
- 1/2 Inch Ginger piece
- 1-2 Chopped Green Chilies(Optional)
- 1 Teaspoon Kasuri Methi(Optional)
- 1 Tablespoon oil
- Salt to taste
Spices:Â
- 1 Teaspoon Red Chili Powder
- 1/2 Teaspoon Turmeric Powder
- 1 Teaspoon Garam Masala Powder
- 1 Teaspoon Coriander Powder
- 1/2 Teaspoon Cumin Powder
Method:
Soak lentils in water for about 20 minutes.
Boil them using 3-4 cups water until soft. Cover while cooking.
Heat a tablespoon of oil in a saucepan and fry the sliced onions on medium heat until slightly browned.
Add tomatoes . Mix. Cover and cook till tomatoes are soft and mushy. Stir in between .
Let the mixture cool down , then grind it to smooth paste along with ginger and garlic. Use very little water while grinding.
Pour the prepared paste over cooked lentils. Add little water .
Add green chilies and let it boil on medium heat for 5 minutes.
Add all the spices and mix.
Add Salt and crush Kasuri methi . Mix and let it simmer on low heat for about 5 minutes.
Remove from heat and enjoy with rice or any Indian bread.
