Mango Cup Cakes / Cakes in Cup / Easy Cup Cakes
My kid loves to eat cup cakes and I hate to buy them from stores all the time. As I don’t have much of patience, I always look for easy cupcake recipe. Since I had some mango pulp lying in refrigerator, gave a thought that why not mix it up in basic cup cake and make it a mango cupcake. So this is what is my best cupcake recipe.
Ingredients for cake:
- 1 and ½ cup All purpose flour
- 1 cup sugar
- 1 cup milk
- ½  cup mango pulp
- ½ cup olive oil
- 3-4 drops vanilla essence
- 3 eggs
- 1 tspn baking powder
Method:
Sift baking powder and flour in a bowl. In other bowl, break the eggs, add sugar, milk an oil . With electric hand blender, mix this on high till sugar gets dissolved.
Then add dry ingredients into this. Add vanilla essence and mango pulp. Mix again for a minute .
Pour this in the cupcake baking cups and arrange them in the cupcake baking tray. Bake in 375 degree Fahrenheit preheated oven for about 30 minutes. Check with toothpick if they are done. The toothpick should come out clean.
Keep them out for cooling.
Ingredients for Icing:
- 1 cup mango pulp
- 1 pint heavy whipping cream
- 2-3 drops vanilla essence
- 1 cup sugar
Beat heavy whipping cream with sugar on high till cream gets thickened. Add mango pulp and essence and beat for 30 seconds. Do not overbeat, as it will get curdled. Now your icing is ready.
Decorate the cupcakes with the Icing filled in piping bags . There .. Those beautiful Cup Cakes are all set.
