Gajar Ki Kheer/Carrot Dry Fruit Kheer
Gajar Ki Kheer/Carrot Dry Fruit Kheer is an indian  dessert prepared using milk as the main ingredient .
I usually prepare vermicelli kheer, but this time thought of trying something new and healthy kheer. I had carrots in refrigerator , So grated them and made this wonderful khir.Â

Ingredients:
- 1 Big Carrot (Grated)
- 1/4 Cup(50 Grams) Dry Fruit Powder( Grind using any dry fruits like , almonds, walnuts, cashew nuts etc)
- 500 Milliliter Milk
- 7-8 Saffron strands kept in 1 tablespoon of warm Milk.
- 2 Tablespoons Ghee or clarified butter
- Powdered sugar as per taste of an individual
- Around 20-30 Raisins
Method:
Add ghee in a heavy bottom vessel (wok) kept on high flame. Add carrots and fry for about 2-3 minutes.
Reduce the heat to medium and add raisins and fry for few more seconds. Keep this aside.
In another vessel, boil milk and add it to carrot mixture.
Cook this on medium high heat for around 5 minutes. Stir in  between.
Add sugar as per how sweet you want. I added 4 tablespoons of sugar. Mix and cook for 2 minutes.
Add dry fruit powder and cook for another 2 minutes.
Switch off the stove and add the saffron milk.
Keep it outside for cooling.
Refrigerate after it is completely cooled and enjoy your chilled carrot kheer.
