Milk Halwa/ Curdled Milk Jam
If you are worried about what are you going to do if your milk curdles, then here is the best recipe to turn it into milk halwa or milk jam. I have purposely curdled my milk using yogurt. Ghee(clarified butter)Â is used for extra flavor and sooji or rava(semolina) for texture.This tastes somewhat like Belgaum kunda sweet.
This milk fudge can be eaten with roti, chapati or any bread for breakfast.
Ingredients:
- 2 Cups ( 500 mililiter) Milk
- 2 Tablespoons of Ghee/Clarified Butter
- 1 Tablespoon of Sooji/Semolina
- 1-2 Tablespoons of Curd/Yogurt
- 1 Cup(128 Grams) of Powdered white Sugar
- 1 Teaspoon of cardamom powder
- Handful of dry fruits
Method:
In a heavy bottom vessel, add ghee and after it melts, lower the flame to medium and fry sooji for few seconds.
Add milk and after milk comes to boil, add yogurt and let it cook for some time till it curdles.
Keep it aside.
Now in a non stick vessel, put sugar and let it cook on high heat without any water till it caramalize. This will take roughly 2 minutes.
Reduce the flame to low and add curdled milk into this and mix well. Increase the heat to medium high and keep cooking till the mixture dries up. This will take rougly 20-25 Minutes.
When the mixture dries up and starts leaving the bottom, add cardamom powder and dry fruits.
Mix , cook for another minute or two and switch off the stove.
Keep aside for cooling. Refrigerate .
This tastes good with roti, chapati, slice bread or even if you eat it without any bread.
