Chicken and Rice in a Bowl

If you are in a hurry and want to cook something nice , tasty and one pot meal, Chicken and Rice in a Bowl is perfect for lunch or dinner.
Today I wanted to prepare a quick one pot meal for lunch. I had only chicken, bell peppers, green onions and carrots in my refrigerator. Was thinking of doing grocery some time later in the evening. So, wondered what can I make with these ingredients. I had prepared enough of fish recipes last week, so got bored of eating them. My son hates rice but I love rice. That makes me innovate something or the other, so that he also can enjoy  the meal.  Yesterday I had prepared Jeera Rice , and some of it was still remaining.  As I said, was looking to prepare one pot meal, I quickly chopped my veggies, and chicken. Marinated chicken with the homemade yogurt paste and prepared yummy and delicious chicken. Then  I simply warmed up my rice and served them together in a bowl. And believe me, this was appreciated by my family.Â
Though I used jeera rice here, the chicken can be served with normal plain rice or noodles. Also, if you want to make vegetarian version of this recipe, use paneer , instead of chicken. This recipe the the best idea for dinner or lunch .

Serves: 3
Ingredients:
- 1 lb(400 Grams) boneless skinless chicken cut into 1 inch cubes
- 1 Teaspooon black pepper powder
- 2-3 Tablespoons oil
- 3-4 Green Chilies(Chopped fine)
- 1/4 Cup chopped green onions
- 1 carrot chopped into small pieces
- 1 Red and 1 yellow bell pepper , chopped fine
- 1 Small onion, chopped fine

Ingredients for marination:
- 6-7 Tablespoons Yogurt
- 1 Teaspoon Ginger Garlic Paste
- 1 Teaspoon Red chili powder
- 1 Teaspoon Coriander Powder
- 1/2Â Teaspoon Cumin Powder
- 1/2 Teaspoon Cinnamon powder
- 1 Teaspoon salt
Method:
In a small bowl, mix together ingredients mentioned for margination.
Apply this paste to chicken cubes and marinate for 30 minutes.
Heat a saucepan. Add a tablespoon of oil and add chopped carrots, and bell pepper. Sprinkle black pepper powder and mix.
Cover and cook on medium high heat for 5 minutes.
Remove the veggies on a plate.
In the same saucepan, add a tablespoon of oil. Fry chopped onion on medium high heat till transluscent and then add chopped green chilies. Fry for few seconds. Add the marinated chicken . Spread it evenly.
Cover and cook on medium high heat for 15-20 minutes or until chicken is fully cooked. Check in between with toothpick.
Add the prepared veggies into chicken . Add chopped green onions and mint. Mix.
Cover and cook on medium heat for another 5Â minutes.
Switch off the stove.
Take a laddleful of prepared chicken in a bowl. Place some hot rice or noodles at the side and serve immedietely. I used jeera rice, but you can eat it with plain rice or noodles too.
Note: Though I prepared dry chicken, it can be made runny too by adding water.
