In Coffee Raisin Cake With Sugar Glaze , lots of nuts and dry fruits are used giving it extra crunch. Goes well with evening coffee.
Coffee cake recipes are my all time favorites and I prefer to use Coffee in most of my desserts wherever possible . A huge coffee fan!!! Earlier I had prepared two delicious and moist coffee cakes: Chocolate & Coffee Ganache Cake, Moist Vanilla Coffee cake With Egg White Frosting and they were a big hit in my house. Every one of my family members that tried the cakes wanted the recipe. I managed to write the recipe a few times on post-it-notes to hand out, but as I ran out, not everyone could have a copy. Until I get new packs of post-it-notes from supply companies such as Office Monster, everyone who didn’t get the recipe will have to wait a little longer.
So, today, since I am in baking mood, decided to try out another version of coffee cake with lots of raisins and a sugar glaze on top.
This is one of the best coffee cake recipes I have tried and goes well during Teatime or Coffee time. You can make experiments with this cake , by adding nuts or other dry fruits along with raisins and I am sure, it will turn out good. You can totally skip the sugar glaze or try out some other topping.

Preparation Time: 15 Minutes
Cook Time: 45 Minutes
Ingredients for Cake:
- 1 1/2 Stick(170 Grams) Unsalted Butter(softened)
- 1 Cup (200 Grams)granulated white sugar
- 1 Cup All purpose flour
- 4 Teaspoons Baking Powder
- 1 Teaspoon Salt
- 1-1/4 Cup Whole Milk
- 3 Whole Egg Whites
- 2 Teaspoons Instant Coffee Powder mixed in a teaspoon of warm water
For Topping
- 1 1/2 Stick Unsalted Butter(softened)
- 1/2 Cup All Purpose Flour
- 1-1/2(357 Grams) cup Brown Sugar
- 1 Teaspoon Instant Coffee Powder
- 1/2 Cup Raisins
For Sugar Glaze:
- 1 Cup Powder Sugar
- 1-2 Teaspoons water
Let’s Prepare Cake batter:
Sift together the flour, baking powder, and salt.
In a separate bowl, using electric beater, cream the butter and white sugar.
In a small bowl, take 2 teaspoons of instant coffee and add in a teaspoon of warm water. Mix and add it to the creamed butter.
Beat for few more seconds.
In the creamed butter, add the sifted flour and the milk in alternate batches, mixing until just combined after each addition.
Take the egg whites in a separate bowl and with beater, beat them on high till you get stiff peaks.
Pour this beaten egg whites into the prepared flour batter and fold gently.
Pour the batter into a greased 9 x 13 baking pan.
Spread evenly.
Time to prepare topping mixture:
In a bowl, add in ingredients mentioned for topping and mix with fork or hands.
It will be a sticky mixture.
Dump it all over the poured cake batter .
Now pop the pan into the oven and bake for 40 to 45 minutes at 350 degree Farenheit.
Don’t worry if the batter is poufing and becoming all buttery and sugary. It is normal. After a while, it will settle down.
Remove out and keep on the cooling rack . Once it cools down, flip it on a tray. turn over, so that the topping crumbly side faces up.
In the mean time , let’s prepare Sugar Glaze.
Take powdered sugar in a bowl and add a teaspoon of water at a time.
Keep mixing until you get nice thick syrup.
Drizzle over nicely cooled cake.
Cut the cake into desired pieces and enjoy with Tea or Coffee.
