How to make masala(Potato stuffing) for dosa(Rice pancakes)?
Potato stuffing or masala for dosas is the best part that can be pre-made and used the next day to stuff our crispy dosas. Very easy to make which lifts up the flavors of dosa.
All this while I was struggling to make perfect masala(Stuffing) for my masala dosa. Tried variations till got close to restaurant taste of masala for my dosas.
Let’s see how to make it.
Preparation Time: 10 Minutes
Cooking Time: 30 Minutes
Yields : Enough for 5-6 dosas
Ingredients :
5-6 Medium Size Potatoes
2-3 Green Chilies
3-4 Tablespoons chopped Cilantro/Coriander leaves
2 Medium Sized chopped Onions
2 Tablespoons oil
1 Teaspoon Mustard seeds / Rai
1 Teaspoon Cumin Seeds /Jeera
1/2 Teaspoon Turmeric Powder / Haldi
1 Teaspoon Split Black Gram/ Urad Dal
1 Tablespoon grated Ginger
Half cup water
Salt to Taste
Method:
Wash, peel, and Cut the potatoes .
Pressure cook them . Should be very soft. Took me 3 Whistles. Roughly chop them once they are cooled.
Heat oil in a pan.
Once oil is hot enough lets give tempering by adding mustard seeds. Keep the heat on medium .
Once they crackle add cumin .
Wait for 5-6 seconds and add urad dal and chana dal.
Cover and cook for few seconds. They will turn sightly brown.
Add grated ginger and fry for 5-6 seconds.
Now add chopped onions and green chilies. Fry till onions turn transluscent. You may add little salt at this point to speed up the process.
Now add turmeric powder and mix well.
Add chopped potatoes and mix well.
Add water.
Press potatoes lightly to make nice mushy potato masala.
Check the salt . Add chopped coriander leaves.
Mix . cook for a minute and remove from heat.
You may refrigerate this after cooling down for dosa next day or if you have already planned dosas, use it and enjoy.
