Kaju Katli / Kaju Barfi / Cashew Fudge
Kaju katli or kaju barfi or cashew fudge  is a traditional Indian Sweet , made during festivals like Diwali, Ganesh Chaturthi. Below is the recipe I tried out for the first time. Though the texture isn’t come out so good, the taste was really awesome. They got over on the same day.
Ingredients:
- Cashews 1 1/4cup(200 grams)
- ½ Cup(100 grams)Sugar
- 1/3 Â Cup water
- 1 Teaspoon Cardamom powder
- Ghee or clarified butter 2Â Tablespoons
Method:
Grind the Cashews in the grinder to make fine powder. Sift the powder and keep aside. On a silver foil, apply ghee and keep ready. I have used homemade ghee In a non stick pan, on medium heat add sugar and water and make sugar syrup. Keep stirring the syrup till it becomes single string.
Now, add cashew powder in this and mix.
Keep mixing until cashew paste thickens and starts leaving the sides of the pan.  Remove it out and knead for some time and make a ball . Keep the ball on the silver foil  where you had applied ghee. Flatten it . Keep another foil on top and flatten it using rolling pin.
Now with the sharp knife, make square or diamond cuts .
