An aromatic bowl of freshly prepared Khichdi can certainly satisfy your soul like nothing else. Khichdi is basically a cocktail of the most healthy ingredients one can eat, i.e., lentils, green vegetables, and a little bit of rice. It’s rich in protein, iron, potassium, extremely easy to digest and more than anything else, it’s very easy to cook.

Here are some popular Khidchi recipes that you can try at home:
1. Moong Dal Khichdi: The regular khichdi
Ingredients: Rice, lentils (dal), ghee, cumin seeds (jeera), onion, tomato, garlic, salt, turmeric, red chili powder, and water.

Recipe:
Take one cup of lentils and .5 cups of rice and mix them
Wash them 3-4 times
Take 2 tablespoons of ghee in a pressure cooker and let it warm
Saute cumin on low flame for a minute and then add chopped onions to it.
Fry onions till they become light brown.
Add chopped tomatoes, half tablespoon turmeric, half tablespoon of red chili powder and salt as per taste. Saute for 5 minutes.
Add washed lentils and rice to the cooker.
Pour 3 cups of water into the pressure cooker and mix well.
Let it pressure cook for 2-3 whistles.Â
Your Delicious, super healthy khichdi is ready! Serve it hot with pickle, papad, and ghee.

2. Vegetables and Oats Khichdi

Steps :
Wash and soak lentils
Wash and chop all vegetables including onion and tomato
Pour 2 tablespoons of ghee into the pressure cooker and add cumin to it.
Add chopped onions and garlic to it and saute them.
Now add tomatoes and spices to it (salt, turmeric, etc)
Now add all chopped vegetables to the cooker and saute them.
Add lentils (daal) to the cooker and fry it for 2,3 minutes
Add Oats to it and fry them for 2-3 minutes.
Pour water and let it pressure cook for 3 whistles.
Serve hot with ghee and pickle.
3. Dalia Khichdi
Dalia or broken wheat is a good source of carbohydrates and helps in keeping the body warm. For this reason, it is often considered as winter food. Dalia khichdi is an instant delicious and healthy food. It is rich in protein and can be eaten at any time of day.

Ingredients: Dalia, lentils(Daal), ghee, chopped mixed vegetables(carrot, beans, peas), cumin, spices, 1 chopped onion and garlic, 1 chopped tomato, water.
Steps:
Wash and soak lentils and Dalia
Wash and chop all vegetables if you want to have vegetables in your khichdi
Pour 2 tablespoon of ghee into the pressure cooker and add cumin to it.
Add chopped onions and garlic to it and saute them.
Now add tomatoes and spices to it (salt, turmeric, etc)
Now add all chopped vegetables to the cooker and saute them. (optional)
Add lentils (daal) to the cooker and fry it for 2,3 minutes
Add water-soaked Dalia (broken wheat ) to it and saute them for 2-3 minutes.
Pour water and let it pressure cook for 2 whistles.
Best accompanied with curd, papad, and pickle.
4. Sabudana Khichdi
Sabudana khichdi is one of the traditional Indian khichdi that’s love by people across the country. It is widely consumed as fasting food in India during the Navratri Festival. It is made with Tapioca pearls, potatoes, peanuts, and herbs. Sabudana khichdi needs to be prepared carefully otherwise it can turn chewy, sticky and clump up.

Ingredients: Sabudana(tapioca pearls), peanuts, cumin, sprig curry leaves, boiled potato, lemon juice, rock salt.
Steps:
Wash and soak Sabudana in water for 6 hours until they soften
After they are completely soaked and softened, drain their water
Add ghee to the pan and warm it
Add cumin and curry leaves to it and saute them
Add cubed boiled potatoes to it and saute them for 2 minutes.
Add salt to it
Now mix Sabudana and peanut powder.
Add Sabudana to the pan and turn flame high
Stir and saute them for 2-3 minutes. Do not overcook
Pour water lemon juice to it and add coriander leaves and peanuts.
Serve hot with ghee and pickle.
5. Millet Khichdi
Millets are a rich source of vitamins B, C, E, and K. It is often considered as a superfood because of the multiple health benefits that it offers. A good alternative for people suffering from High-blood pressure and diabetes, millet also helps in weight loss. It’s filling, healthy, amazing to keep you energetic and positive the whole day.
