Potato Bhaji / Potato Vegetable Recipe
Potato bhaji recipe or batata bhaji is a simple and quick recipe to be done when you need something to eat quickly for lunch, dinner or breakfast.
You can use the remaining potato vegetable for any kind of stuffing. You can use it as filling in filo dough cups, Idlis , or for making vegetarian puffs.
So here are the ingredients and method of potato recipe.

Ingredients:
- 1 Big potato boiled
- 6-7 Curry leaves
- 1 Teaspoon Cumin seeds/Jeera
- 1 Teaspoon Mustard Seeds
- 1 Teaspoon Turmeric Powder/Haldi
- Pinch of Hing or Asafoeteda
- 1 Tablespoon chopped coriander leaves
- 2 Chopped green Chilies
- Salt to taste
- Oil for tempering
Method:
Cut the boiled potato into small cubes.
Heat 1 tablespoon of oil on high heat in a heavy bottom wok and when the oil is heated, reduce the flame to low.
Temper now, with cumin, mustard, curry leaves, chopped green chilies cover and let it splutter for 30 seconds.
Now add hing ,turmeric, Â potato pieces , salt and little water. Mix, cover and cook for another 2 Minutes on medium heat.
Remove the cover, sprinkle coriander leaves, mix  and serve hot with any bread of your choice.
