When you want some quick and best fish appetizers, instead of going for deep fried recipes, it is always healthy to go for baked ,grilled or shallow fried or pan fried dishes. I always try to avoid oil or use less oil wherever necessary.
We get these nice golden pompanos in Asian market here and I make Goan style fish curry of it or simply fry them on pan with very less oil. Any how you prepare them, they always taste yum.
Today let us see how to make crispy pan fried pompano or golden pomfret . You can use white pomplet too for this recipe.

Preparation Time: 15 Minutes
Cooking Time: 10 Minutes
Yields: 4 Pieces
Ingredients:
- 1 Medium sized Paplet/Pomfret or Pompano cut into 1 inch size pieces
- 2-3 Tablespoons Oil
- 1/2 Cup Rawa/semolina or breadcrumbs
- 1 Teaspoon Salt+ Extra for pomfret pieces
Ingredients for Fish Batter:
- Small bunch of Coriander Leaves/Cilantro
- 1 Teaspoon Sauf/Fennel Seeds
- 3 Black pepper corns
- 3 Cloves
- 1/2 Teaspoon Haldi/Turmeric Powder
- 4-5 Dry red chilis
- 3 Garlic Cloves
- 1 Inch Ginger Piece
- Marble size ball of Tamarind
Method:
Wash Pomfret well with water. Sprinkle some salt and keep aside for 5 minutes.
Grind all the masala ingredients mentioned above with about 1/3 Cup water to smooth batter for fish. Add a teaspoon of salt into the paste. Mix well.
Apply this batter or paste to pomfret pieces and keep for marination for about 10 minutes.
Heat a skillet, add oil .
Coat the marinated pomfret pieces well with semolina on both the sides.
Place them over oil on the skillet.
Let them fry on medium heat for about 3-4 minutes.
Flip to fry on the other side.
Once they are all brown and crispy, switch off the heat and remove them out on a serving plate.
Enjoy this tasty , crispy pomfret masala fry as an appetizer.

I found some pomfret fillets in the shop and decided to try this recipe, with the fish cut in 15mm strips and using massala spice mix (Reunion Island style) to which I added garlic, dried cilantro leaves and ground hatch chili for some extra heat. I just let it marinate for 2 hours to make up for the undoubtedly less strong taste.
Fried in rice oil and served over tumeric rice and smokey eggplant stew this made a wonderful meal, thank you!
