Easy Chicken Stir Fry is a quick fix to your lunch or dinner whenever in rush. Chicken stir fry is One of the best one pot meal .
Last Saturday, we were supposed to go to this Chinese restaurant and then something changed our plan. But somehow, we wanted to eat Asian food. I had chicken breasts in my freezer and few vegetables left, so decided to make something different , Chinese style which is also not deep fried and healthy to eat.
I went on internet, researched and came up with this simple chicken stir fry with vegetables recipe, which is the best chicken stir fry recipe I have ever tasted.
In this, recipe, you can add any kind of vegetables, not limited to broccoli, celary and mushrooms, but add in carrots , green, red peppers or even peanuts. Any how you prepare this stir fried chicken, it still tastes awesome.
If you are noodles fan, prepare you noodles separately as per the instructions given on the packet and while serving ,place some noodles at the side in a plate.
My chicken stir fry is little watery, but if you want it completely dry, then, you will have to really squeeze out all the sauce from the chicken before cooking it .

Ingredients for Stir Fry:
- 20 Grams Baby Bella Mushrooms(You can use other kind of your choice)
- 1 Onion
- 4 Celery stalk
- 500 Grams Brocolli heads
- 1 Lb(400 Grams) boneless, skinless chicken breasts
- 1/3 Cup Olive oil (Or any kind of cooking oil)
- 1 Teaspoon Black Pepper Powder
- 1 Tablespoon Hot Sauce
- Cooked Rice Noodles or Rice(Optional)
- 3 Tablespoons Soy Sauce
- 3 Tablespoons Rice vinegar or Lime juice
- 2 Tablespoons Honey
- 2 Tablespoons Hot Sauce
- 2 Teaspoons Cornstarch
Let us first prepare our vegetables. Slice the onions very thin and keep aside. Slice the mushrooms.
Make bite size pieces of broccoli and chop celery stalk very small.
How to marinade the chicken?
Cut the chicken breasts into very thin slices, wash and keep aside.
Now prepare chicken stir fry sauce by mixing all the ingredients mentioned for sauce . Stir until cornstarch dissolves completely.
Drain the chicken strips well and coat with the prepared sauce.
Keep for 15 minutes.
Let us stir fry vegetables now.
Heat the oil in a saucepan and fry onions for a minute on medium high heat.
Add celery and fry for another minute.
Add broccoli , stir and fry for 2-3 minutes covered.
Now add mushroom slices , stir, cook covered until they soften up. Will take 2-3 minutes.
Remove these vegetables on a separate plate.
Drain the marinated chicken and reserve the marinade.
Add the chicken to the same saucepan and cook over high heat stirring, until the pieces soften up.
Return the vegetables to the pan an pour the marinade liquid over it.
Cook until all the juices nicely gets absorbed and the chicken thickens up a bit.
Sprinkle Black Pepper Powder and Hot Sauce. Mix well and remove from stove.
Serve chicken stir fry with cooked rice noodles or with hot steaming rice.
