Whenever I think about preparing some sweet or dessert, I get concerned because of sugar contents. Mostly I try to add some jaggery(panela), or dates , to adjust the sweetness. I always enjoyed granola bars and wondered if some alterations can be done to it , so that me and my family can enjoy them, totally guilt free . So, tried out these healthy energy balls. Full of power packed food with amazing benefits of flax seeds , pumpkin seeds and nutty crunchy roasted sesame seeds. And most important is that , they are no cook no bake balls. Of course if you roast sesame seeds at home there is some cooking , but I used pre roasted ones.
Rather then store bought ones, these power balls gives you instant energy boost with necessary vitamins , minerals and fibers . Munch them for breakfast , or as a dessert after meals. I love to munch on these snacks any time of the day.
So, lets say bye bye to the unhealthy sugar loaded snacks and try out these beauties . Feel free to add any kind of nuts or even a little bit cocoa powder. If you are giving them to you little ones, they will surely love them if you mix a few chocolate chips. But I personally don’t add them , still my son enjoys these balls even without choco chips.
So , let’s get started with this easy , quick and healthy recipe of energy balls with dates.
Preparation time: 20 Minutes
Yields : 12 Balls
- 1/4 Cup Flax Seeds
- 1/4 Cup Cashew nuts
- 1/4 Cup Pumpkin Seeds
- 1/4 Cup raisins
- 1/4 Cup Roasted Sesame + little extra for dusting
- 10-12 Seedless Dates
- 2-3 Tablespoons Raw honey
In a blender or food processor, grind flax seeds, cashew nuts and pumpkin seeds to coarse powder .
Now pulse dates in a grinder till they are nicely crushed .
Mix in 1/4 cup roasted sesame, raisins, crushed dates and honey with the prepared powder till well blended. If the mixture is too dry to shape , add little more honey .
Take a ping pong size mixture and start shaping up into balls.
Once they are nicely shaped, roll them into roasted sesame seeds till they are nicely coated on all the sides and again press them a little so that sesame seeds gets stuck to the balls.This step is optional . I love that extra crunch of sesame , so prefer to add them lots .
Once they are all ready, store them in the airtight container and refrigerate.
Consume within a week.
