Who says dessert cannot be prepared without sugar? Here is a recipe of Sugar Free Pineapple Dates Cake . Very easy and tasty.
I had this Walmart bought pineapple , but when we tasted it, it was sour. I do make lots of juices, smoothies but wanted to make something different out of it this time, which is also healthy and tasty.
I went on google and looked for sugar free desserts and came across many diabetic desserts recipes which were totally sugar free . In some of those they used dates for sweetener while in others they used brown sugar. Since cake is wellknown in my house, I finally decided to prepare a loaf cake. Since I wanted to make it totally healthy , I thought why not use dates, which are also rich in iron. I decided to add some raisins too, in my loaf cake so that you get that sweet crunch while biting each piece. Though I used all purpose flour in this recipe, you can also use whole wheat flour to replace all purpose flour.
I have used around 20 dates in my recipe , so my cake was moderately sweet. You can increase the quantity if you prefer it more sweet. Pineapple and dates are boiled together in water and then made into puree. This puree is later added to flour along with other ingredients which makes the cake super moist and soft.
So lets us see how to make sugar free cake in a very short time.
Preparation Time: 10 Minutes
Cooking Time: 35 minutes
Yields : 10-15 Pieces
- 1 1/2 Cup All Purpose Flour
- 1 Cup chopped Pineapple along with juice
- 20 Seedless Dates
- 1 Cup Water
- 1 Teaspoon Baking Soda
- 2 Whole eggs
- 1 Teaspoon Vanilla Essence
- 1/4 Lb Salted Butter
- Handful of Raisins
Boil together dates and pineapple in a cup of water for 5 minutes on medium high heat.
Switch off the heat and add salted butter.
Let the mixture cool down completely.
Once it cools down, add it to mixer grinder and make fine puree.
In a big mixing bowl, beat the eggs with electric beater on high for about 2 minutes.
Add vanilla essence and mix.
Sift flour and baking soda in egg mixture and mix with spatula.
Add in the prepared pineapple dates puree and mix well with spatula. Make sure that there are no lumps.
Mix in handful of raisins in this batter.
Grease a 8 x 4 inches loaf pan with oil and pour this batter in it.
Bake at 375 degree Fahrenheit preheated oven for approximately 30 minutes. (Oven time may vary upon individual oven). Check if the cake is done with the help of toothpick. If it comes out clean after inserting in the middle of the cake, that means your cake is done, otherwise keep it for longer period of time. This cake takes little longer to bake.
Remove and keep it on the cooling rack.
Once cooled properly, flip the cake on a plate and cut it.
