Any kind of Indian dishes tastes best if you add in Homemade Tandoori Masala Spice Mix. Always better to stock it .
Back in India, Chicken Tandoori was one of our top most Indian Appetizers on the list. In India, we have these small gadas or street stalls where they make fresh Tandoori chicken On the coal , nicely roasted. I love the burnt smell of that tandoori. But I never got an opportunity to try out that kind of tandoori, as I had no tandoor oven nor , the coal to roast . But Whenever I prepare tandoori in convection oven, I make sure that I use my homemade tandoori masala, instead of store bought one so that I come close to the street Tandoori Chicken taste. Yesterday, I was expecting some of my husbands colleagues and their families, and because my Tandoori chicken is always appreciated by family and friends , thought of preparing it for appetizer. I don’t want to boast or something, but they really were impressed and asked me for the recipe.
Tandoor masala which I prepared, can be used in variety of dishes, not only for chicken tandoori, but also in chicken tikka masala, or even if you sprinkle a little while preparing any vegetarian food, it just enhances the flavor and taste of whatever you cook.
Preparation time: 10 Minutes
Roasting Time: 6-7 Minutes
Yields : 1 Cup
- 1/2 Cup Coriander seeds
- 1/2 Tablespoon Black pepper Corns
- 1/2 Tablespoon Cloves
- 2 Large Cinnamon sticks
- 3-4 Black Cardamom
- 5-6 Green Cardamom
- 3 Teaspoons Kasuri Methi(Dry fenugreek leaves)
- 1 1/2 Tablespoons Cumin Seeds
- 3 Tablespoons Kashmiri Red Chili Powder
- 2 Tablespoons Garlic Powder
- 1 Tablespoon Onion Powder (Optional)
- 1 Teaspoon Turmeric Powder
Dry roast all the whole spices on very low heat till they are fragrant. Don’t over roast them otherwise tandoori masala will give a burnt smell.
Remove on a plate to cool down completely.
Grind in a grinder to fine powder.
Add all the spice powder as shown in the picture above, in the prepared whole spice powder and grind again for few more seconds for them to get mixed well .
Remove out and store in a airtight container.
Use a tablespoon of this powder in any curry or tandoori chicken whenever required.
