Shahi Paneer/How to make quick shahi paneer?
Shahi paneer is an arrangement of paneer, local to the Indian subcontinent, comprising of a thick sauce of cream, tomatoes and Indian spices.
Beginning with the rich indulgences of Mughlai food (consequently the expression “shahi”, regarding the illustrious title of Shahanshah in Mughal India), this dish is made by emulsifying tomatoes, onions, ground cashews, explained spread and cream into a curry, and adding paneer cut into cubes and some spices.
It is served with Indian breads like roti , naan or with rice.
Preparation Time: 5 Minutes
Cooking Time: 30 Minutes
Serves : 4 People
Ingredients :
350 Grams Paneer (cubed)
2 Cubed onions
1/2 Cup Yogurt/Curd
1 Tomato , roughly chopped
2 Green chilies
50 Grams Cashew Nuts
1 Teaspoon Ginger garlic paste
4-5 Green Cardamoms
2 Tablespoons Kasuri Methi
2-3 Tablespoons Ghee
1 Cup Water
Salt to taste
Spices :
1 Teaspoon Red Chili Powder
1/2 Teaspoon Turmeric Powder
1 Teaspoon Garam Masala
1 Teaspoon Cumin/Jeera
3-4 Cloves
1 Inch Cinnamon stick
Method:
Heat a tablespoon of ghee in a pan.
Once oil is hot, add cashew nuts and green cardamoms, and fry for few minutes till cashewnuts lightly browned.
Add cubed onions and green chilies. Fry till onions turn transluscent.
Add tomatoes and cook the mixture till tomatoes turn soft and mushy. You may cover the pan and stir in between.
Once this mixture is cooled, grind it without any water.
Now in the same pan add another tablespoon of ghee and add cloves, cinnamon and cumin.
Fry for few seconds till the spices are fragrant. Should take few seconds .
Add ginger garlic paste and saute till raw smell fades away.
Add the prepared cashew nuts paste , along with spice powders like chili powder turmeric powder and garam masala.
Fry on low heat for 4-5 minutes. Add salt.
Add yogurt (It should be beaten well). Cook on medium heat for 5-10 minutes , stirring in between.
Add 1 cup water , mix and let it come to boil.
Add paneer cubes and cook for 2-3 more minutes. I used my homemade paneer.
Crush some kasuri methi and add it in gravy.
Switch off the heat and serve shahi paneer with roti or jeera rice.
