Strawberry Walnut Pan Cakes
Pancakes are normally prepared out of all purpose flour with egg and baking soda. But today I am going to show you how to make healthy, tasty and quick pan cakes. In this recipe, instead of all purpose flour, I have used whole wheat flour, which is more nutritious. In it I have added strawberries and walnuts ground together with milk. If your kid is a fussy eater with fruits, you can use any kind of fruit in this recipe.  He/She will not even know and will enjoy these pan cakes. Vegetarians can skip egg . These pan cakes goes well with any kind of syrup. You can use strawberry syrup, chocolate syrup or maple syrup. So let’s begin with our easy strawberry walnut pancakes.
Yields: 3 Pancakes
Total time required including preparation time: 25 Mins
Ingredients:
- 4-5 Strawberries
- Handful of walnuts
- 1/2 cup milk
- 1/2 Cup whole wheat flour
- 1 Teaspoon Baking powder
- 1 Large Egg
- 1 Tablespoon melted butter
- 1 Tablespoon honey
- Little oil for brushing the skillet
- Some maple syrup
- Some chocolate chips for decoration(Optional)
Method:
Grind together first 3 ingredients to smooth paste.
Break and scramble the egg in a bowl and to it add melted butter. Mix well.
Now pour the strawberry paste into egg mix.
Mix together wheat flour and baking soda together in a bowl and add the egg mixed in strawberry paste into these dry ingredients.
Add honey.
Mix well.
Heat a non stick skillet on high heat.
Lower the heat to medium and brush the skillet with oil.
Pour around 4-5 tablespoons of the above batter in the center of the skillet.
Wait till it cooks well on one side.
You should see it bubbling up a bit.
It will take around 1-2 minutes.
Flip and repeat on the other side.
Take it out on a plate.
Pour 1 tablespoon of maple syrup on top.
Cook the second pan cake and place it over the first one on the plate.
Again drizzle maple syrup.
Cook the last one and place it on top of other two.
Drizzle with maple syrup.
Decorate with chocolate chips and let your kids enjoy these warm, healthy and tasty strawberry walnut pan cakes .
