Indian Street Noodles
This is an Indian street food normally found on roadsides, sold by street vendors and peddlers, very easy to make and tastes delicious. These are prepared using Hakka noodles. They belong to Indo-Chinese cousins. Any vegetables can be added for healthier version. This can also be prepared without chicken and eggs.Â

Ingredients:
- Hakka noodles(200 gms)
- 1/ cup diced onions
- 1/2 cup green and yellow bell peppers
- 1/2 cup shredded cabbage
- 3-4 cloves garlic chopped very finely
- 3-4 green chillies finely chopped
- 2 tsps black pepper powder
- 1 and 1/2 tblspoons dark soya sauce
- 1/4 cup of oil
- 2 tbsps white vinegar
- 2-3 eggs
- 1 cup boiled boneless chiken cut into bite size pieces
- salt to taste
Method:
To prepare omelet:
In a bowl break eggs, add salt and black pepper powder and beat till smooth. On a non stick pan, add little drops of oil and pour egg mix. Cook till done. Remove from pan and slice the omelet into small pieces. keep aside.
Use Ching’s Hakka noodles. Follow the instructions on the packet for boiling the noodles.
Chop the vegetables, chili, garlic and onions as shown above.
In a wok, add 2 tablespoons of oil, Add garlic and chilies.
Fry for few seconds until nice aroma comes out. Don’t let garlic burn.
Add Cut onions, fry for 2-3 minutes, then add the vegetables and fry till they become soft.
Add soya sauce. Mix.
Now add chicken pieces and omelet.
Add prepared noodles. sprinkle some pepper powder. Remaining oil . Thoroughly mix this. Add salt as per taste.
And there, your Indian street noodles are ready to be served.
