Avocado Pinwheel sandwiches
Pinwheels also called as roll ups is a very healthy and quick appetizer for get togethers or parties. The stuffing can be prepared using meat and veggies with some spreads or even the plain vegetarian roll ups are very tasty. Here the filling is applied to the tortilla where you can use either wheat or corn tortillas. I have prepared tortillas at home but can use store bought ones.
Today I am going to show you healthy Avocado pinwheel sandwich. So let’s start with it.
Yields: 24 pin wheels from 3 tortillas
Total time required: 1 Hr 50 Mins
Ingredients for the dough:
- 1 Cup tortilla flour mix(You can use wheat flour instead)
- Little Warm Water for making dough
- 1 Tablespoon of oil
Ingredients for the Filling:
- 1 Ripe Avocado
- 1 Teaspoon Lime Juice
- 2 Tablespoons chopped cabbage
- 2 Tablespoons grated carrot
- 2 Tablespoons grated Broccoli
- 1 Teaspoon Garlic powder( or grated garlic)
- 1 Teaspoon Red chilli flakes
- 1 Teaspoon Black pepper powder
- 1 Tablespoon Sriracha sauce(Or any hot sauce)
- 4-5 Tablespoons of tomato ketchup
- 3 Tablespoons sour cream (you can also use cream cheese or ranch sauce in addition to this)
- Salt to taste
Method for preparing tortillas:
Knead tortilla flour with little water at a time till you get smooth dough.
Add 1 tablespoon of oil.
Knead at least for 2 minutes.
cover with wet cloth and keep for 30 minutes.
After 30 minutes, make 3 balls out of it.
Heat a skillet .
Take a ball, apply some flour on it and with a rolling pin, roll it into thin disk.
Flip it over on the skillet and let it cook on medium high heat for a minute each on both the sides. Flipping sides in between.
You will be able to see that it is slightly browned when done.
Repeat for all.
Method for filling:
Wash the Avocado, remove peel, take it in a bowl and mesh it well with a spoon or fork.
Next add all the ingredients mentioned in the ingredients for filling ( except sour cream and ketchup) and mix well.
Keep aside.
Method for Pinwheels:
Take a tortilla, apply some tomato ketchup and spread evenly on the tortilla.
On top, put 1 tablespoon sour cream and spread evenly.
Now scoop some Avocado filling and place it on tortilla and spread.
Roll the tortilla slowly.
Repeat for other two.
Wrap each of these in separate silver foils and refrigerate for around 1 hour.
Remove from the refrigerator and with sharp knife, cut these rolls into 1 inch size pinwheels.
