A quesadilla is a wheat tortilla or a corn tortilla filled with a mixture of vegetables or meat , with lots of cheese, cooked often on a griddle, then folded in half to form a half-moon shape.
The origin of the quesadilla was colonial Mexico. These quesadillas taste great with sour cream and guacamole. Today let’s see how to make quick and easy chicken quesadilla . This recipe is very basic and simple . Here I have made tortillas out of ready made tortilla flour and the instructions are given on the pack. If you are making vegetarian quesadilla, then replace chicken by mushrooms or tofu or paneer.

- 1/2 Pound (225 Grams)cooked and shredded chicken breasts
- 1 1/2 Cup (340 Grams)Shredded Colby & Monterey Jack Cheese
- 1 Teaspoon Garlic powder
- 1 Teaspoon Red Chilli powder
- 1 Teaspoon Black Pepper Powder
- 2 big Tortillas
- 1 Tablespoon butter
- Oil for brushing
- Salt to taste
Mix together Garlic powder, Red Chilli powder, Black Pepper Powder and a Teaspoon of salt .
Put this in the cooked shredded chicken and mix.
Heat a tablespoon of butter in a skillet and saute this chicken for a minute. Keep aside .
Brush one side of tortilla with oil, which will be placed down on the skillet while cooking.
Flip the tortilla and arrange a generous amount of cheese on half side of this tortilla and cooked chicken on top.
Again put generous amount of cheese on top of the chicken and fold this tortilla in half and place on a skillet kept on medium high heat , brushed with oil.
Press a bit and cook uncovered till the cheese melts . This will take around a minute.
Flip and cook the other side.
Remove and repeat for the other tortilla.
Cut them into halves and enjoy with sour cream or ketchup or guacamole.
