Who says one cannot make ice cream without ice cream making machine? I had some mango pulp with me in the fridge and was wondering what to do with that. Fed up of making other stuff with it and since its boiling hot these days thought of making mango ice cream. Googled for many ice cream recipes but was preferring eggless ice cream recipe and then tried out this homemade ice cream.
Servings: Around 10 people
Time to prepare: 10 minutes
15 oz of Ricotta cheese(You get it easily in grocery store)
8 oz Heavy Whipping Cream
1 Cup Mango pulp if you dont have fresh mangoes
1 to 2 Cups of Powdered sugar depending on how sour the mangoes are.
If using fresh mangoes then make the paste of them in the mixer along with sugar. Keep it aside. Since Ricotta cheese has uneven texture, blend it in blender for few seconds to make paste. Now take heavy whipping cream into a big bowl and add ricotta paste and mango pulp along with sugar . Mix well and then beat with hand blender for 2-3 minutes and transfer into the container for freezing . Freeze it overnight and Remove out 15 minutes from the freezer before serving. Garnish with anything of your choice
