Goan Paav/ Goan Bread/ Laadi Paav
Laadi paav is one of the most popular bread in Goa , Maharashtra and many other states in India. It is mostly served with Paav Bhaaji , misal paav or even with chicken gravy
Laadi paav is one of the most loved Goan bread in my family whenever I make Goan Chicken xacuti or paav bhaji.
Normally we buy laadi paav from our bakery but ever since lockdown, we have stopped outside food especially these bakery products arent been sealed so why take risk.
I do make paav very often in my convection but sometimes get lazy because its bit lengthy process. In lockdown we got no choice but to make everything from scratch.
The ingredients used in laadi paav are very less and easily available in any grocery stores.
Preparation and resting Time: 40 Minutes
Baking Time: 20 Minutes
Yields : 9-10 Paav
Ingredients :
450 Grams Maida /All purpose flour
25 Grams granulated sugar(Castor sugar)
10 ml oil
20 Grams Active dry Yeast
1 Teaspoon salt
25 Grams salted Butter kept at room temperature
300-325 ml warm Water
2-3 tablespoons milk for brushing
Method:
Take flour on a clean platform .Make a well in the center and add in yeast, sugar, oil and salt.
Add little water and mix the ingredients . Keep mixing it till you see small bubbles getting formed. This means the yeast has been activated.
Now add more water and mix all the flour. Keep adding water and mixing till the water is just enough for making a dough.
Knead in circular motion as show in the video. The dough will be sticky . Don’t worry about it. Keep kneading for around 5-6 minutes. You can apply little oil on your palm if you find it difficult to knead.
Now apply softened butter, little at a time. Continue kneading. Once the dough is smooth and shiny, Take it and stretch it . Just bang on the platform.
Now fold it into three . Check the video.
Again Remove , stretch and bang. Again fold into 3. Repeat this for around 7-8 times. This helps forming the air in the bread so that you get it all porous inside when you open the bread once baked.
Now just make it into a round shape and put in a greased bowl. Cover with a plate or moist cloth.
Keep it aside for around 30 minutes or till it doubles.
Take a baking tin. Grease it with oil and also sprinkle some dry flour inside so that the bread doesnt stick to the sides.
I also place butter paper at the bottom of the tin. It helps to remove paav easily.
After 30 minutes, just make small round balls of dough and place it in the greased baking tin.
Brush each one with milk. Milk wash helps in giving golden brown crust.
Cover with moist cloth and let them rest for 10 mins. The balls will rise more after 10 mins as seen in picture below.
Bake in preheated oven (200 degree celcius) for 20 minutes or until the top looks browned .
Brush each paav with butter for a nice glaze(This is optional).
Remove laadi paav on a cooling rack. Allow to cool .
