Homemade Bread / Dinner Rolls
Yesterday my husband wanted to eat Maharastrian Misal Paav and I had all the ingredients at home. I wanted to prepare everything from the scratch even the bread as I was in the mood of cooking. As these  Indian bread or dinner rolls consume most of the time for fermentation, I had to make bread preparation in the morning and prepared Misal in the evening.Â
These pav are famous in Goa where I grew up. Pav means a small loaf of bread  and got it’s name from pão  – a portuguese word for bread. I remember when we used to get nice hot freshly baked paav with great aroma coming out. Never had chance to experience once we moved to Mumbai. Then later here in USA , I totally missed those rolls. Of course here you get different variety of freshly baked bread but I miss the taste of pure Goan bread.
I sincerely tried these dinner rolls recipe and believe me , the taste came exactly the same as Goan pav and they are the best for any kind of gravy items like pav bhaji, misal pav or even the chicken curry.
Yields: 12 Medium Size dinner rolls

Ingredients:
- 3 Cups (420 Grams)All Purpose Flour / Maida + Some for dusting
- 1 Cup(236 ml)Lukewarm Water
- 2 Tablespoons of Olive Oil or any cooking oil + 1 more for greasing the tray
- 2 Tablespoons Brown or white sugar
- 2 Teaspoons Active Dry Yeast
- 1 1/2 Teaspoon Salt
- 1 Egg White(Optional)
Method:
Grease the baking tray with oil and dust it with flour. Keep aside.
Mix 1/4 Cup warm water , Yeast and 1/4th Teaspoon sugar and keep till it bubbles up. It will take 5 mins.
In the remaining water, add oil and  salt . Pour bubbled yeast in the flour and start adding the water with oil and salt in the flour little at a time till you get nice dough.
Knead this dough for at least 10-12 minutes.
Wrap with wet cloth  and keep in the warm place for 2 hours for it to rise.
After 2 hours, remove the cloth, you will see it nicely doubled in volume. Again knead it for 2 more minutes, dusting it with some dry flour.
Flatten the dough using rolling pin or hands to form a rectangular shape.
Divide it into 12 equal size balls.
Place each ball on the greased baking tray, leaving about 1 inch distance between each.
Cover and keep on warm spot for 2 more hours.
After 2 hours, they will nicely rise again forming bigger balls and stick to each other.

Brush these balls with egg white. This is optional. Egg whites gives it nice glaze once baked.
Preheat the oven to 450 degree Fahrenheit and bake for 15 minutes.
Once done, immediately transfer them on a wire rack for cooling. They will feel hard when removed out from oven but will eventually soften up once cooled down.
Once these rolls are cooled down , they become nice crusty from outside and soft when you press them.
Enjoy these bread rolls with your favorite curry or Misal.
