Jam Cookies / Jam Filled Cookies / Cookies With Jam
Few days back I was looking for creative ideas about easy cookies recipe. I wanted to make some creative cookies out of jam I had in the refrigerator like something called jam cookies or jam filled cookies. Then came up with the idea of making these beautiful jam drop cookie recipe. They really melt in your mouth.
Ingredients:
- 1 Cup of maida or All Purpose flour
- 1/2 teaspoon baking powder
- 1/2 teaspoon salt if you are using unsalted butter
- 1 Â sticks (1/2 cup) unsalted butter, softened
- 1 cup Powder sugar or White sugar
- 1 large egg
- 1/4 Cup of any type of Jam
- 1/2 teaspoon vanilla essence
Method:
In a mixing bowl mix, take room temperature butter . Add sugar and beat at high speed using electric mixer till its soft and fluffy . This may take about 2-3 minutes. Now beat in egg and vanilla essence. Sift all purpose flour and baking powder along with salt into this mixture. Mix this until everything is combined well. Don’t knead the dough. Just mix and make the dough. Wrap this dough with plastic wrap and keep refrigerated for around 2-3 hours.
Preheat oven at 350 degree Fahrenheit . Remove the dough out from the refrigerator and roll it up on the parchment paper about 1/2 inch thickness. Use 2 cookie cutters of any shape one big and other small to make a hole to fill up jam to cut out the cookies. Cut few cookies with bigger cutter and others with smaller one. Arrange cookies on ungreased baking sheets keeping about 1 inch distance between each cookie as cookies always expand while baking. Â Bake them for 8-10 minutes . Do not let brown . Remove out and let them cool down . cover the whole-less cookies with jam. Keep in airtight containers. They taste excellent during Tea Time.
