Mix Vegetable Paratha / veg paratha / vegetable Mix Paratha
Paratha is originated from North of India. It is a flatbread type of  Indian bread to be eaten with any dips of your choice. There are many types of parathas or paranthas available like aloo paratha, gobi paratha, paneer paratha. Many variations are also being done and now people started making even non vegetarian parathas.
Today I was looking for aloo paratha recipe to pack for my husband’s lunch box. But then I thought of mixing some vegetables in it and giving a healthy flavor of mix vegetables.
So here goes my Mix Vegetable Paratha recipe.
Ingredients:
- 1 Boiled Potato
- 1 grated Carrot
- 1 Cup grated Broccoli
- Bunch of Coriander leaves chopped
- ½ Onion Chopped
- 1 Green Chili chopped
- 1 tbsp coriander powder
- salt as per taste
Method:
Make Whole wheat dough like how you make for chapati. Only this time the dough should be soft.
Take all the chopped ingredients in a mixing bowl . Add salt and coriander powder , mix well.
Peel and mash boiled potato.
Add this mashed potato into vegetable mixture and mix well until potato gets fully mixed with the veggies.
Make small balls of this mixture and keep aside.
Meantime heat the skillet.
Take little ball of wheat dough( size of tennis ball). Roll it a bit with the rolling pin.
Now take vegetable ball and place it in the center .
Close all the sides of the rolled dough to cover the ball of vegetables.
Apply little bit of dry wheat flour to this ball so that it doesn’t still while rolling parathas.
Now roll until it reaches the desired thickness. The Parathas are usually thicker than the  normal chapati.
Put it on the heated skillet. cook for a minute. Flip and apply bit of oil or ghee.
After another minute, flip and cook the other side. Apply oil or ghee on this side now.
Few seconds later, remove from the skillet and serve hot with Yogurt, Chutney or Pickle of your choice.
