Moong Usal / Sprouted Green Gram Stew
This moong sprout or moong sprout recipe can be done in a very short time and is super rich in proteins and all the necessary nutrients.Â
Moong or Green Gram is a very healthy lentil rich in proteins. Sprouted moong beans are easy to digest and are more nutritious.
To get sprouts to moong or green gram, wash them and soak in water for around 6-8 hours. Then tie in a muslin cloth and keep in a warm place for at least 12 hours. After opening this muslin cloth, you will see sprouted moong. Use this sprouted moong for the moong usal recipe.Â
So let’s start making this mung usli or muganchi usli.
Ingredients:
- 1Â cup Sprouted Green Gram/Â mung beans
- 2 Teaspoons of oil
- 1 Teaspoon of Mustard Seeds
- Pinch of Asafoetida/Hing
- 5-6 Curry leaves
- 1/2 Teaspoon of Turmeric powder/Haldi
- Handful of  freshly grated coconut
- 2-3 kokum (optional)
- 1/2 Teaspoon Garam masala
- Salt to taste
- 1/2 tsp sugar or to taste
Method:
Heat oil in a heavy bottom pan. Â Once the oil is hot, add mustard seeds and curry leaves.
Once mustard seeds crackle, add asafoetida and turmeric.
Now add mung beans, Cover and cook over medium-high heat.
Do not let the mung beans become dry. Also, do not add too much water at once. It will reduce the flavors.
Keep sprinkling 2-3 tbsp water to avoid drying. It will take around 5 to 10 minutes to cook the mung beans.
Once the beans are halfway done, add coconut, garam masala and kokum, sugar and salt.
Mix well and cook for another minute
Serve this Sprouted Green Gram Stew hot with any kind of Indian Bread.
