Pasta salad with chicken N Greens
I do like to experiment with my salads in many ways by adding beans, by adding different vegetables, sprouted green beans , pomegranate seeds etc. They taste amazing in any form.
Doctor’s say, eat greens and beans for healthy life. And with hectic life schedule, people hardly get time to exercise. So why not turn to some healthy eating habits , which no doubt also tastes yummilicious.

If you are vegetarian, don’t add chicken, instead, add some Tofu.
Also more greens can be added . If you don’t like vinegar, substitute with lime juice.
When I make some healthy recipes, I want to make sure that they are completely healthy, so in my chicken and greens salad, instead of normal pasta, I used Whole Wheat Pasta .

Ingredients:
- 2 Cups uncooked Whole Wheat Penne Pasta(or any kind of pasta of your choice)
- 1/4 cup Apple cider vinegar (or lime juice)
- 1 Tablespoon yellow mustard Sauce
- 1 Teaspoon minced fresh garlic
- 1/4 Cup olive oil
- 1/2 Teaspoon kosher salt
- 1/2 Teaspoon black pepper Powder
- 1 Cup Baked chicken cut into bite size cubes( previously marinated with herbs and spices of your choice)
- 1 1/2 cups chopped Fresh Spinach
- 1 Cup boiled Sweet Corn
- 1 Cup cooked black beans
- 1/2 Cup chopped green onions
- 1/4 Cup Chopped onion
- 170 Grams Portbella mushrooms(optional)

Method:
Cook pasta according to package directions(Don’t add Salt). Drain.
Heat a Tablespoon of Oil in a pan and saute mushrooms with black pepper,little salt and 1 Teaspoon garlic powder on medium high till soft.
Keep them aside.
Combine Apple cider vinegar, mustard sauce, and minced garlic in a small bowl, stirring well with a whisk. Slowly add oil, stirring constantly with a whisk or spoon. Add salt and pepper.
Mix in cooked beans, onion, boiled corn, chopped green onions,Cooked Pasta and cooked chicken pieces. Toss to combine.
Finally combine spinach and toss again.
