Step by Step recipe of Aamras / Indian Mango Puree
Aamras is usually prepared and served in India during the mango season. Try it out and enjoy for breakfast with chapatti or as a dessert.
The other day, we got around 6 mangoes from Walmart and they weren’t so sweet. And my son prefers very sweet mangoes. I had actually bought them for him , because mango is just one fruit that he loves and eats without grumbling. But now since they weren’t that sweet, I was wondering what to do about them and thought, why not make some aamras. Â Aamras or amras is Indian way to puree mangoes with sugar, cardamom and sometimes with nuts. There are different ways to prepare this aamras. Aam stands for mango and ras meaning juice. Â It is normally prepared with Alphonso mangoes, but here in USAÂ it’s difficult to get them, so you can prepare the same recipe with the mangoes you get here.
Aamras can be served as  dessert after hot and spicy Indian lunch/ dinner or can be enjoyed along with lunch/dinner with poori or chapati. Me and my son love to eat it for breakfast with chapati.
Though I have added milk into it for thinner consistency, you can completely avoid milk , if you want only mangoes. Also, instead of sugar, some people add jaggery(panela) and even drizzle some dry ginger powder. While adding sugar, the sweetness of mangoes has to be taken into consideration. I always add less sugar in the beginning, and increase it later, if the sweetness is not perfect.Â

Preparation time: 10 Minutes
Chilling Time: 30 Minutes
Yields:Â 1 1/2 Cup
Spices:Â
- 2 Big mangoesÂ
- 3-4 Tablespoons of white granulated sugar(adjust according to the sweetness of mangoes)
- 1 Teaspoon Cardamom Powder
- 1/4 Cup milk
- Kesar / Saffron strands for garnishing(Optional)
Method :
Wash the mangoes and remove all the pulp. Blend all the ingredients mentioned above(Except saffron strands)  along with the mango pulp  in a blender to smooth puree.
Remove it out in a container and garnish with some saffron strands. Cover and refrigerate for at least 30 minutes.
Serve chilled with poori or roti. Also , you can enjoy this dessert without poori and roti. I bet you will love it.
