Easy Strawberry Pudding – Valentine Special
Impress your valentine with this delicious strawberry pudding prepared by blending in eggs with strawberry puree prepared using coconut milk.Vanilla essence gives it extra flavor.
Every Valentine’s day I sit lazily, sipping up coffee thinking about how we spent all these years together , fighting over silly things, then patching up, loving and caring about each other. I was a dumb cook when we got married , but lucky me, that I got loving, caring hubby and In-laws otherwise I would have not made it.
Yesterday morning my teenager son asks me “Mom what are your plans tonight?” I say , “No clue about your dad, but I have lot on my mind today”. And really , I geared up with his favorite menu . Specially strawberry pudding is one of his favorite desserts. Not to say he was totally moved.
For those who love to prepare something with minimum ingredients and hastle free dessert, should definitely go for this recipe. I have separately pureed my strawberries using coconut milk . Egg yolks and sugar are mixed together and puree is added to it. Just to hide the egg smell, I used vanilla essence. And thats it. Bake ,serve and enjoy it.

Cooking Time : 1 Hour

Ingredients :Â
- 400 Ml Coconut milk
- 5 Egg Yolks
- 200 Grams Strawberries
- 1 Cup white granulated sugar
- 1 Teaspoon Vanilla Essence
- 4-5 Drops of Pink or red food color(Optional)
- Whipped cream for presentation(Optional)
- Strawberry pieces for presentation(Optional)
Method:
Preheat oven to 400 degree Farenheit.
Grind strawberries with coconut milk to make smooth puree.
In a large bowl, beat egg yolks for few seconds.Add sugar and continue beating for about a minute.
Add strawberry coconut puree in egg mix and beat again till sugar is well combined.
Add vanilla essence and mix.
Add food color and mix.
Take pudding bowls (I used over safe glass bowls, you can use Ramekin bowls too) and pour 3/4 of each bowl with the prepared batter.In a wide tray pour in hot water and place all the bowls in.Make sure that the water is halfway up the bowls.
Bake them for about an hour .
Remove them out and let them cool down completely. Decorate with whipped cream and strawberries and serve.
