Urad Dal Vada
is a non deep fried version of Medu Vada: South Indian breakfast fritters served with Chutney prepared with urad dal batter.
It’s really been busy week , lot of chores to be done. Same every day schedule , get up early, prepare breakfast, prepare my kiddo’s lunch box , send him to school, think about what to prepare for lunch , then think about evening snack and later dinner. My most important part of meal is preparing something healthy for breakfast. Specially for my choosy and picky son.
As I was browsing about Medu vada , which is one of the famous South Indian breakfast fritters, prepared out of urad dal(Split Black gram) paste with some spices and served with chutney, got an idea, why not prepare the same without deep frying. I am happy that it’s guilt free and also since it is quite filling , don’t have to worry about hectic daily schedule of my son and hubby. All you have to do is prepare the same recipe of Medu Vada and instead of deep frying them , just fry in Appe pan with little oil. Also, Urad dal called as Split black gram or Vigna mungo is one of the healthy options as it has high levels of proteins, potassium , calcium and other sources. That makes it a healthy choice to opt for breakfast.
Make them extra cripy by adding little rice flour which I skipped. But overall urad dal vada came out really nice . Only thing is that, you have to serve them immediately when hot.
Preparation Time:Â 4-6 Hours
Cooking Time : 20 Minutes
Serves : 4
Ingredients :Â
- 1 Cup Urad Dal/Split Black Gram
- Pinch of Hing/Asafoetida
- 2-3 Green Chilies, Finely Chopped
- 2 Teaspoons Grated Ginger
- Salt to taste
- 2-3 Tablespoons Olive oil or any cooking oil
Method:
Wash and soak Urad Dal in water for about 4 hours or overnight.
Next day using very little water grind to fine thick paste .
Cover and keep aside for about an hour or two in warm place .
Add hing, Chopped green chilies, grated ginger and salt .
Mix well.
Heat appe pan and drizzle little oil.
Take about 2 tablespoons of the mixture and pour into each pocket of appe pan .
Cover and let them cook on medium heat for about 5 minutes. Then flip them over and let them cook on other side too. Till you see both the sides slightly browned.
Remove them out and serve with coconut chutney. My son likes them with ketchup. They can be served for breakfast or as an evening snack with a cup of tea.

Hi ..instead of appam maker can I use idli maker to get same results?
Never tried it in it but I guess it will become soggy in idli maker, as we steam our idli right?
