Roasted Chicken and Beans salad
If you want to go for something healthy and also tasty for dinner or lunch, go straight for this yummy salad, where there is roasted chicken, beans and also greens . This way you don’t have to worry that you have left out anything in your meal. If you don’t want to include chicken, then substitute it with paneer(Cottage Cheese) or Tofu or Mushrooms.
In this salad, black beans are used which is high in fiber, folate, protein, and antioxidants, along with numerous other vitamins and minerals. Black beans are Soaked overnight in water and next day cooked in pressure cooker for upto 2 whistles. You can also prepare this by using canned beans.
Use your choice greens . I have used kale and lettuce. The recipe is very simple and if you have roasted chicken ready, this is very quick meal for your hungry tummy.

Ingredients:
- 1 Â 1/2 Cup cooked black beans
- 1 Tomato finely chopped
- 1 Onion Finely chopped
- 1/2 Cup of lettuce finely chopped
- 1/2 Cup of Kale leaves Finely chopped
- 1/2 cup of Red or green Bell pepper finely chopped
- 2 Roasted Chicken Breasts
- 1/2 Cup of shredded Cheddar Cheese(Optional)
- Some croutons (Optional)
Ingredients for the dressing:
- 1 Big Tomato Chopped roughly
- 2 Â Garlic cloves
- A bunch of Corinader Leaves
- 1 Teaspoon Red Chilli Powder
- 1 Teaspoon Black Pepper Powder
- 1 Teaspoon Vinegar
- 1 Teaspoon Salt
- 1 Teaspoon Lime Juice
- 1 Table Spoon Olive Oil
Method:
To roast chicken breasts, First clean them , Brush some oil on both the sides and sprinkle some spices like pepper powder, dry basil leaves and salt on both the sides.
Arrange on the baking tray lined with silver foil and bake at 400 degree Fahrenheit preheated oven for 30 minutes.
Cut the roasted chicken breasts into bite size cubes.
Grind the ingredients mentioned for dressing together to smooth paste. Keep aside.
Mix all the ingredients together except cheese and croutons. Pour the prepared dressing over it and mix well.
Arrange the salad in the serving bowls.
Sprinkle some shredded cheese and croutons. Enjoy this healthy and nutritious salad for dinner or lunch.
