Carrot Honey Wheat Cake
I was looking for some healthy recipes for our wedding anniversary and to start with, wanted to prepare such a cake which is healthy and also very tasty and came across this Carrot honey whole wheat cake. I was skeptical before making this cake as, I always used sugar and no honey for the cake. Also , I never used whole wheat flour before for the cake. But trust me , this cake came out unbelievably tasty.
I didn’t use any butter here , but carrots make it moist , so need not worry whether the cake is going to be dry. You can also add some almond pieces along with carrots to give it nutty taste and more richer in nutrients.
My son is very particular about the taste , but he loved it so much and finished almost half in a day and didn’t even noticed that it is wheat cake and no sugar is being used. so let us start with it.
To Begin with,  apply some oil to round or square cake trays , sprinkle some flour and keep ready.
Makes : 1 Large cake for 8Â People
Wet Ingredients:
- 1/2 Cup Olive Oil
- 2/3 Cup Honey + some extra
- 1/2 Cup Milk
- 1Â Teaspoon Vanilla essence
- 1 1/2 Cup Grated Carrots
Dry Ingredients:
- 1 1/2 Â cups of whole wheat flour
- 1 Teaspoon baking powder
- 1 Teaspoon Baking Soda
- 1 Teaspoon Cinnamon Powder
- 1/2 Teaspoon Salt
For Icing:
- 4 Egg Whites
- 1/2 Cup Powder Sugar( Can substitute with honey)
- 1/2 Teaspoon Vanilla essence
Method for cake base:
Mix wet ingredients(except carrots)Â together and with electric hand beater, beat till honey gets mixed well.
Mix all the dry ingredients into this wet ingredient mixture and beat lightly for few seconds. Add Carrots and mix with  spatula.
Pour the mixture in the greased cake trays and bake at 400 degree Farenheit for about 20-30 minutes or till done. Check with toothpick . It should come out clean.
Remove and keep on cooling rack till they are completely cooled.
Method for Icing:
Beat the egg whites along with vanilla Essence using electric beater on high speed until nice stiff peaks are formed. This will take about 5 minutes.
Add sugar and and beat for few more seconds.
Cake Decoration:
Remove the cakes out from the cake trays .
Place one on the plate , apply some honey and put some icing on it. Spread evenly.
Place the other cake on top and spread the icing evenly on top and sides. Decorate it with anything you have. I have sprinkled drinking chocolate powder on top.
