Beetroot Cup Cakes With Oreo Frosting
My kid is a big cup cakes fan and always wants to buy them whenever we visit walmart or any other grocery stores. And I always find some excuses and make him get distracted. I too love cup cakes but looking at the food color they put there, oh! Â I Â just don’t feel like going for them. I always try to avoid artificial food colors and look out for natural food colouring , wherever possible.
The other day, I wanted to make few red colored cup cakes and didn’t wanted to make use of artificial color. I did some research on how to make food coloring and learnt how to make natural colors at home. Henceforth will implement those whenever I make cookies or cakes. If you are planning to use  red color, then go for Beet Puree , instead of Beet juice, because raw puree works best instead of juice.
You can also make red velvet cake or red velvet cupcakes with beets and throw away artificial red color.
So, Using the above technique, I prepared around 20 Cup cakes using beet root puree prepared out of 1 medium sized beet, mixed in my regular cup cake ingredients and believe me, they turned out to be super moist and fluffy.
I also prepared oreo cookies butter cream frosting for my cupcakes , because Oreos  are another favorites in my family. But only make sure that you make fine powder of your cookies while mixing in the frosting, othewise, the pieces will get stuck to the piping nozzle and you won’t be able to frost properly.
Actually  I wanted to prepare oreo cupcakes, but later changed my mind so thought of preparing oreo frosting and Beet Root Cup cakes.

Preparation Time: 30 Minutes
Baking Time: 20 Minutes
Ingredients for Beet Root Cup Cakes:
- 1 1/2 Â Cups(Â 210 Â Grams) All Purpose Flour
- 2 Tablespoons Cocoa Powder
- 1 Teaspoon Baking Powder
- 1/2 Teaspoon Baking Soda
- 1 Cup White Granulated Sugar
- 3 Eggs
- 3/4 Cup Grated or chopped Beet Root
- 5 Tablespoons(3/4 Cup) or 170 grams Salted Butter Kept at room temperature
- 3/4 Cup (180 Ml) Buttermilk
- Juice of 1 Large lime
- 1 1/2 Teaspoon Vanilla essence
Ingredients for Oreo Frosting:
- 8 tablespoons(1/2 Cup) Salted Butter kept at room temperature
- 3/4 Cup( Â 120 Grams ) Powder Sugar
- 1 Teaspoon Vanilla essence
- 1-2 Teaspoon Heavy whipping cream or milk
- 5-6 Tablespoons Oreo cookies powder( Crush the cookies in food processor or blender to fine powder)
Note: Above frosting ingredients should be increased depending upon the cup cake size. Mine were small cup cakes.
Method for Beet Root Cup Cakes:
Preheat Oven at 350 degree Farenheit.
Puree Beet root, buttermilk, lime juice and vanilla essence till smooth.
Sift flour,cocoa,baking powder and baking soda in a bowl.
In another big bowl, take Butter Kept at room temperature. Beat it till smooth. Add 1 egg at a time and beat scrapping the sides in between.
Add sugar and beat again till everything is well assembled and smooth.
Alternate adding flour mixture  and beet puree to butter mixture.
Begining and ending with dry ingredient. Beat for 8-10 seconds after each addition . Scrap the bowl in between.
Once the batter is well mixed, pour them in the cup cake liners kept in muffin tray or silicon cup cake liners and bake for about 20 minutes or until toothpick comes out clean once inserted in the center of each cup cake.
Once baked, keep them for cooling and proceed with next step.
Now lets see how to make oreo frosting :
Mix sugar and softened butter on low speed , till well blended. Now increase the speed to medium and beat for about 2-3 minutes.
Add vanilla essence and whipping cream 1 teaspoon at a time as needed.Continue beating.
Once you get nice and smooth buttercream frosting, add oreo cookies powder and mix using spoon.
Pour this cream in the piping bag and decorate your cup cakes.
And there you go, all set to eat these moist and beautiful Beet Root Cup Cakes.
