Cheese Stuffed Mashed Potato Balls Without Deep Fry

Rains and snacks have a very good relationship. They just go hand in hand like best buddies. If you really want to enjoy rains, then a crunchy and spicy snack is a must with a hot cup of tea.
Before I begin, just wanted to thank Archanas Kitchen for making me 2nd prize winner for Mother’s day contest and sending me beautiful ‘Appam Pan’. I was waiting for the right moment to make use of the pan. Prior to these potato balls, I never have used such type of pan and really liked the way it helped me cook them without deep frying.They turned out extremely delicious.
I have used plain cheese for stuffing , but if you like you may use grated cheddar or mozzarella. Grated carrots added in the potato mash gives it a healthy touch. I would love to add other veggies too like grated beetroots, chopped spinach etc. This way I am happy that something healthy goes in my family’s tummy. These crispy from outside and soft from inside mashed potato balls with cheese centers could best be enjoyed with a cup of tea when its raining outside. These can also be served as a vegetarian appetizer.

Yields :9 Balls
Ingredients :Â
- 1 Medium size Potato
- 1/2 Cup Carrot, grated
- 1 Cup Cheese, grated(You may use any kind of your choice)
- 3/4 Teaspoon Pepper Powder
- 1 Teaspoon Garlic Powder
- 2 Tablespoons Olive oil
- Salt to taste
Method:
Boil and mash potato .
Add in carrots and mix properly.
Add all the spices like pepper powder, garlic powder along with olive oil and salt . Mix well and keep aside.
Keep Appam pan for heating.
Grease your palm with little oil. Take about 2 tablespoons of prepared potato mash and press it on your palm to form a thin disc.Take about 2 teaspoons of grated cheese and place it in the center of mashed potato disc. Fold the edges and make round ball.Repeat it for all.
Check if the pan is well heated by sprinkling some water. Water should sizzle. Now drop in 3-4 drops of olive oil in each cavity of the pan and place all the balls.
Reduce the heat, keep it on medium and sprinkle few drops of oil over each ball.
Let the balls cook on medium heat for about 5 minutes. Flip them over and cook on the other side too . Make sure that both the sides are crisp. Remove them out and serve with tomato ketchup or any Chutney.
