Doodh Fene/ Doodh Pedhe / Thickened Milk Sweet
Doodh Fene or sweet prepared by thickening the sweet milk(whole milk with 100% Fat) is a famous recipe from Goa(India) normally made during happy moment for celebrations.
These pedhas have awesome taste is prepared from just 3 ingredients and you literally have to hide them from the kids to adults or otherwise they will be over within no time.
So here is the Step by step recipe of how to make this sweet is explained here.
Ingredients:
- 1 Litre Whole milk (use only full fat milk)
- 3/4 Cup(150 Grams) powdered white sugar
- 10-12 Cardamoms crushed to powder
- 2 Tablespoons of Ghee or clarified butter for greasing
Method:
Grease a plate with a tablespoon of ghee.
Boil milk in a heavy bottomed non stick wok(vessel) and lower the heat to medium.
Keep stiring on the medium heat milk thickens and you can see the base of the wok when you move your spatula inside. This will take roughly about 45 minutes.
Add sugar and cardamom powder and cook for another 15-20 minutes on medium.
When the mixture is completely thickened, it will start leaving the sides and you will be able to see it turning into dough.
At this point, remove it and pour it on the plate greased with ghee.
Let it cool for 5 minutes. Don’t allow to cool completely otherwise it will dry up and you won’t be able to make pedhas.
Now take a marble size ball, grease your palms with ghee and shape up the pedhas. Doodh fene or doodh pedhe from Goa has typical shape as shown in the picture. But can be given any shape .
Keep these pedhe for cooling . Roughly around an hour or two. Then keep them in the airtight container.
