Goan Kalwa Fry / Pan Fried Oysters
Goan Kalwa Fried or pan fried Oysters is one of the Goan speciality . Medium size oysters are coated with masala(Spices) and shallow fried . They are served as sides for lunch or dinner.
Oysters are super rich in zinc, which is required for strengthening the immune system of your body. Other minerals and vitamins like calcimum,iron, mangnesium are also present in oysters.
In konkani , we call it kalwa or kalva  and they just taste amazing in any recipe. Today I am going to show you the quick and easy way to cook them. This is  Goan(Indian) way to shallow fry these oysters.
The recipe is very simple and also requires minimum number of ingredients. Here they are coated with some spices and semolina-rice flour mixture which you already have in your kitchen and then with little oil, pan fried on a skillet.
But they just have to be completely dry before frying otherwise they will loose all the spices they are coated with.
Ingredients:
- 10-12 big size oysters
- 1/4 cup of Rava/ semolina
- 2 Tablespoons oil for shallow fry
- 1 Tablespoon Garam Masala( I used everest)
- 1 Teaspoon red chili powder
- 1/2 Teaspoon Haldi/turmeric powder
- 1 Teaspoon salt
Method:
Rinse the oysters 2-3 times and keep them to drain in a strainer or any vessel with small holes so that all the water is thoroughly drained out.
This is important otherwise the spices won’t remain properly attached to oysters while frying. You can also pat them dry with paper towel if you have less time.
Mix all the masala in a plate along with rava .
Heat a skillet, add 2Â tablespoons of oil .
Coat each oyster well with the prepared masala ,rava mix and place on the skillet.
Cover it with a plate and cook on medium high heat for about 5 minutes.
Check in between. If it looks dry, add little oil and continue frying.
After 3 minutes, flip sides and cook uncovered for more 5  minutes.
Once they look fully cooked( dark browned on both the sides), switch off the stove .
Serve Pan fried Oysters hot with rice and fish curry.
