Quick Veggie Rollups
Quick Veggie Rollups are very simple, which is an perfect after school snack. Prepared using veggies, mayo and cream cheese.
Two days back I got this lovely package from Primal Kitchen and I am so thrilled to use their products in my recipes. Loved the mayo they sent me, specially Chipotle Lime mayo. Surprised to read that they use organic, cage free eggs, its totally dairy Free and sugar free. They also use avocado oil in them. I also received their protein bars to try. Little chewy but tasty.
Since my son is growing up, I always keep thinking about what to give him for snacks after school and try to get ideas from here and there. I always look for some quick , easy and healthy snacks for him. Since Tortilla Rollups is one of his favorites, thought of preparing these quick and simple snack for him today using the mayo I got from primal kitchen.Â

Preparation time: 10Â Minutes
Setting Time: 1 Hour
Serves : 3 People
Ingredients:Â
- 3 Tablespoon Cream cheese kept at room temperature
- 1 Tablespoon Primal Kitchen Chipotle Lime Mayo
- 1/2 Tablespoon Primal Kitchen Mayo
- 1/2 Cup Grated Carrot
- 1/2 Cup Chopped Spinach
- 2 Tablespoons  finely chopped onion
- 1 Teaspoon crushed black pepper(or black pepper powder)
- 1/2Â Teaspoon Chili Flakes
- 2 Tortillas( Wheat or all purpose flour)
Method:
In a bowl, mix first 8 ingredients mentioned to prepare the filling. Make sure the filling is nice and easy to spread on tortillas.
Divide the filling in two equal parts and spread each part on both the tortillas really well as shown.Â
Now start rolling. Keep in mind that it should be rolled really tight. Wrap both the rolls separately in aluminium foil or a plastic wrap and refrigerate for up to an hour.
Remove from refrigerator and slice them up . I made each slice about an inch thick.Â
Serve immediately or if you keep them out too long, they get soggy.Â
