Simple Curried Chicken
Generally we make chicken gravy using coconut as a main ingredient in Goa(India). But today I tried something different with my chicken gravy and it turned out superb. Appreciated by my family. I made chicken by using tomatoes and onions instead of coconut. Also I used curry leaves here for tempering which are mostly used in South Indian Cuisines. This is a very easy curried  chicken  recipe and doesn’t take much time. The consistency of the  Gravy for this can be made as per ones choice to be thick or thin by adjusting the amount of water. Also you can make it more spicy by increasing the amount of red chilli powder.

Ingredients:
- 250 grams( small pieces)Chicken
- 1/4 cup finely chopped Big Onion
- 1 Medium finely chopped Tomato
- 1 Teaspoon Red Chilli Powder
- 1/4 Teaspoon Turmeric powder
- 1 Teaspoon  Coriander powder
- 1Teaspoon  Garam Masala Powder
- Coriander Leaves for garnishing
- Little water as required
- Salt to taste
To grind:
- Tomato – 1 big sized(chop roughly)
- Big Onion – 1 medium sized(Chop roughly)
- Ginger – 1/2 inch piece
- Garlic – 4 cloves
- Green chillies 4
- A bunch of Coriander leaves
- Fennel Seeds – 1/2 tsp
To Temper:
- 1/2 Tablespoon oil
- 1/4 Inch piece Cinnamon Stick
- 2 whole Black Cardamom
- 2 Red Chillies
- 1/2 Teaspoon Saunf/Fennel Seeds
- 7-8 Curry Leaves
Method:
Clean Chicken and keep aside.
Grind the ingredients listed under “To Grind” list to turn into fine paste.
Heat oil in a heavy bottom vessel and add ingredients listed under, “To Temper” list. and let it splutter.
Add chopped onion and tomato and saute for 2-3 minutes or until the raw smell goes away.
Add powdered spices like  turmeric powder,coriander powder,chilli powder and garam masala powder  and fry for a minute.
Add the paste into this mixture.
Cook on medium heat, till the raw smell of onions goes away. This will take minimum 5 minutes.
Add chicken and saute till the pieces are nicely coated with the gravy.
Add salt to taste.
If you feel mixture is too thick, add little water and cook it covered on medium high heat till the chicken becomes soft.
This will take 15-20 minutes.
Once cooked, turn the stove off and garnish with coriander leaves.
Enjoy this easy and tasty chicken dish with rice, roti, chapati, naan or any other bread.
