Pepper Stuffed Mussels : Delicious Seafood Appetizer is one among the best appetizers and you have to try it at home.
Whenever you are arranging some party, or inviting some guests at home, you always have to be prepared with the menu you are going to serve and that includes appetizers,main course whether it is vegetarian or non vegetarian , desserts and drinks. For me , I make lists for appetizers and main course , and under them, I categorize them into vegetarian and non vegetarian food items , dry items and gravy items and whenever it comes to preparing appetizers, I am never worried because I have so many of them tried and tested at home. One of them is stuffed mussels. Any kind of shellfish recipe is my family’s favorites and is also very easy to prepare.
Being from Coastal regions of India, I am a hard core seafood eater and always prefer the fresh ones rather then the frozen ones. But sometimes you have to manage with the frozen ones when there is no option. But this time, we got some fresh mussels in Asian fish market here and we bought lots of them. Half of them I prepared Goan style dry mussels which is the same as the recipe of clams dry and the rest of them I prepared stuffed mussels.
This recipe, like other healthy recipes, is quick and simple.The mussel meat is cooked in the mixture of onions, some spices, herbs and sauce. It should be dry and not runny. The prepared mixture is then stuffed into each shell and broiled in the convection oven. Though I have broiled my mussels, you can serve them without broiling too.Â
Preparation time: 20Â Minutes
Cooking  time: 10 Minutes
Serves : 3 People
Ingredients:Â
- 30 Big mussels
- 1 Small Onion, Chopped very fine
- 1 Green Chili , Chopped very fine
- 4 Garlic cloves,either minced or grated
- 1/2 Tablespoon tomato ketchup
- 1 Teaspoon red chili powder
- 1/2 Teaspoon Turmeric powder
- 1/2 Teaspoon dry thyme(Optional)
- Parmesan cheese for garnishing(Optional)
- 1 Tablespoon oil for sauting
- Salt if required(I did’t use )
Method:Â
Open the mussels and remove the meat out.
Wash and keep around 15-20 shells to stuff later.
In a medium saucepan kept on medium heat,add oil and saute garlic and onions till onions become translucent.Â
Add green chilies,thyme , red chili powder and fry for few more seconds.
Add mussel meat,cover  and cook on medium heat for 7-8 minutes.
Sprinkle turmeric powder and mix.
Add ketchup , mix and remove from heat.
Take a teaspoon of mixture and scoop into each of the mussel shells.
Place all the stuffed shells on a baking pan.
Sprinkle some Parmesan cheese on each of the stuffed shells and broil for about 4 minutes at 350 degree Fahrenheit.
Remove out and serve immediately.
