Here comes another version of healthy cup cakes. In this recipe, the frosting is purely made out of yogurt and honey. No sugar or butter added. Also , cake base is prepared out of whole wheat instead of all purpose flour. So those who are concerned about health, can surely eat these yummy and delicious cupcakes.
You can increase or decrease the quantity of honey as per your preference. Also , if you don’t want to put eggs in cakes, use extra oil or butter. These are one of the best ever cup cakes I have eaten and tried out. I was worried about the taste but they came out exceptionally delicious and soft.
So here comes the easy recipe for these healthy cup cakes.
Yields: 18 Cup cakes
Preparation Time:25 Minutes
Bake Time: 15 Minutes
Total Time: 40 Minutes
Ingredients for Frosting:
- 1 Cup (235 grams) Thick Yogurt( Preferably Greek)
- 2 -3 Tablespoons of Honey
- 4-5 Drops of Vanilla essence(Optional. I didn’t use)
- Green food color
Ingredients for Cake:
- 3/4 Cup (105 grams) Whole wheat flour
- 1/2 Teaspoon baking powder + 1/2 Teaspoon Baking Soda
- 1/2 Cup Honey + little extra to drizzle over the frosting
- 2 Eggs
- 1/2 Cup ( 120 ml) Milk
- 5-6 Drops of Vanilla essence
- 1/3 Cup Olive Oil
Method for Frosting:
If you are using thick Greek yogurt , then directly mix yogurt with honey and food color till you get desired consistency of the color.
If you are using non thick yogurt, then tie yogurt tightly in muslin cloth and next day all the water will drip down from the yogurt. Use the thick yogurt from muslin cloth.
Keep this frosting for later use.
Method for cakes:
Sieve all the dry ingredients together in a bowl.
Now take all the wet ingredients in other big bowl.
With electric hand beater, beat till everything is well combined.
Pour in all the dry ingredients in the wet ingredients,mix and beat for few seconds.
Arrange cup cake liners in the muffin trays and pour in this batter in all of them.
Bake at 375 degree Fahrenheit preheated oven for about 15 minutes.
Check with toothpick. It should come out clean.
Keep them out on the cooling rack and wait till they are completely cooled down.
Drop the frosting in the piping bag and pipe the cup cakes. Drizzle some honey over it.
Decorate with any cake decoration material you have.
