Dahi Bhindi /Tangy Indian Okra in Yogurt
Dahi Bhindi /Tangy Indian Okra in Yogurt is one of the best and healthy vegetarian meals. Quick, easy, tasty and one of the best among Indian dinner ideas.
Most of the people love the taste of Okra or lady finger vegetable, because of it’s texture and slimy nature. I never liked it since childhood, so my mom used to try out different ways to make me eat the vegetable. There are n number of Okra recipes available but I prefer Indian Okra recipes, can be pan fried okra,bhindi chili, okra curry , or bhindi masala .Â
My son loves bhindi (Okra) and can eat it in any form. Today, since it is a vegetarian day, I prepared this tangy Indian Okra in yogurt sauce which is quite easy and tasty.
Remember to wipe the bhindi  after rinsing them , otherwise they become very slimy while cooking.

Ingredients:
- 200 to 250 Grams Bhindi/Okra
- 1 Medium onion, finely chopped
- 1Â Medium ripe red tomatoÂ
- 3-4 Finely chopped Green chilisÂ
- Handful of Cashew Nuts
- 1 Tablespoon Gram Flour/Besan
- ½ Cup Yogurt/Curd
- 3-4 garlic cloves(Grated)
- ½ Inch Ginger(Grated)
- 1 Teaspoon Cumin Seeds/Jeera
- ½ Teaspoon each of Coriander powder/dhania powder,Cumin Powder,Turmeric powder/haldi and Garam Masala
- ½ cup water
- 2-3 Tablespoons oilÂ
- Handful of chopped coriander leaves/Cilantro
- Salt as per taste
Method:
Wash Okra well with water and pat them dry with kitchen towel. They should be really dry , otherwise, they become slimy while cooking.
Trim off the heads of Okra and cut them into 1 inch pieces. Keep aside.
In a medium saucepan, kept on medium heat, add 2 tablespoons oil and saute bhendi(Okra) for few minutes until they change color. (It might take 5-7 minutes).
Remove them out and keep seperately.
Make puree of tomato and cashew nuts using very little water.
Whisk the yogurt using spoon or a whisk until smooth.
Add a tablespoon of oil in the same pan. On a low heat, drop in cumin seeds and allow them to crackle.
Add chopped onions and fry till they change color to golden.
Add grated ginger garlic and saute for few seconds.
Add tomato puree and saute on medium heat for 5-7 minutes.Â
Stir in between.Add chopped green chilis and saute for few more seconds.
Reduce the heat. Keep it on low and add Gram flour and mix for few seconds. Because of Gram flour, Yogurt doesn’t curdle after adding.
Add the powdered spices like Coriander powder ,Cumin Powder,Turmeric powder and Garam Masala.
Mix and saute for a minute.
Remove the pan from heat and add whisked yogurt and water.
Mix well and add sauted Okra along with salt.
Keep it on low heat  for simmering till the mixture thickens. Stir in between.
Switch off the flame and sprinkle chopped coriander leaves.
Mix well and serve with roti, naan or chapati.
