Goan Ansache Mel / Quick Pineapple Jam
This is a Goan style pineapple jam where it is bit watery and instead of grating or blending Pineapple, it is cut into very small pieces and then cooked with sugary water. It goes well with bread or chapati. The recipe is very easy, quick with all the ingredients readily available in your kitchen.Â
Yields: 2 Cups

Ingredients:
- 1 Â Fresh Pineapple
- 1/3 Cup ( 70 Grams) of White Granulated Sugar
- 5-6 Tablespoons of water
- 1 Teaspoon cardamom powder
Method:
Wash the Pineapple well. Cut it into halves . Then Take off the peel.
Cut it into very small bite size chunks.
In a heavy bottom vessel, cook these pineapple pieces with 5-6 tablespoons of water on high heat for 2 minutes stiring in between.
Lower the heat  to  medium and  cook for.another  2-3 Mins
Add  sugar and on medium heat, cook for 5 Minutes.
Switch off the stove.
Add Cardamom powder.
Let the jam cool down  and then you can enjoy this Tasty Pineapple jam with bread.
Refrigerate the remaining jam in a glass container .
