Kesar Badam Doodh / Saffron Almond Milk Smoothie
Badam or Almonds is one of the nutritious nuts, especially for kids. And if your kid hates milk, this is the best way to make him or her drink the milk. Who doesn’t love almonds and kids will finish it without you yelling at them. Personal experience.
This doodh(Milk) gets nice thick texture because of the almond paste and Kesar(Saffron) gives this shake a nice refreshing aroma and I bet you won’t stop after one glass of it.
So let us see this quick and easy recipe of Indian beverage, Kesar Badam ka doodh.

Preparation Time: 10 Minutes
Cooking Time: 10 Minutes
Ingredients:
- 3/4 Cup Whole or Split Badam / Almonds
- 1 1/2 Cup(360 Ml)Milk+ 1/4 (60 Ml) Cup extra for paste
- Few Saffron Strands + little extra for garnishing
- Pinch of Ilaichi/ Cardamom Powder
- 4 Tablespoons Sugar(Adjust according to your preference)
- Little bit crushed almonds for garnishing(Optional)
Method:
Soak almonds in water for 10 minutes and peel them off. I used split almonds and avoided peeling.
Discard water and make a smooth paste in a blender using 1/4 Cup milk .
Heat a small pan and add few strands of saffron in this hot pan and with the help of pastle, grind it to fine powder.
In a saucepan, take 1 1/2 Cup milk and mix this almond paste in it well,
Keep the saucepan on medium heat and  let it cook for 10 minutes until it thickens. Keep stirring, in order to avoid sticking the milk at the bottom of saucepan.
Now add saffron powder, sugar and mix.
Add a pinch of cardamom powder and mix.
The smoothie will get nice saffron color slowly.
Switch off the flame and let it cool down completely.
Chill it in the refrigerator and pour in the glasses.
Garnish with crushed almonds and few strands of saffron.
