Spicy Indian Goat Curry / Goat Curry Recipe /Mutton Curry

There are varieties of Indian goat curry recipes depending on the taste of individual. This particular recipe is how we usually prepare in Goa.Â
For Preparing any type of Goat Recipe, first you have to make sure that the meat is fresh. If it isn’t fresh, It won’t get soft and will be hard and chewy. So always soon you get goat meat, prepare it on that day itself. To make sure that the meat is fresh, it should be bright red in color and not brown or faded red. The picture below shows that the goat meat should look.This  spicy Indian Goat curry is prepared for lunch or dinner and loved by all. So here is the step by step recipe of mutton curry.
Ingredients:
- 1 Lb or 500 Grams goat meat
- Salt to taste
- Â Lime Juice out of 1 lime
- 1 Tablespoon Oil
For Marination:
- 1 inch ginger Â
- 3-4 cloves garlic
- 1 bunch coriander leaves
- 3-4 green chillies
- 1Â Teaspoon turmeric powder
- 1 Teaspoon salt
For Gravy:
- Garam masala like cloves 8-10, Black pepper 8-10, fennel seeds 1 tsp, cinnamon stick 1  inch, 1 bay leaf, coriander seeds, 1 black cardamom, 5-6 Dry red Chillies
- 1 cup freshly grated coconut or dry desiccated coconut
- Marble size Tamarind ball
- 1 sliced onion

Rinse goat meat well , and apply lime juice and 1 teaspoon of salt. Keep for around 10 minutes.
For marination:

Grind the ingredients mentioned in marination and apply it to the goat pieces.

Apply it to the Goat pieces and keep for marination for around 30 minutes.

For gravy
Fry the garam masala on medium heat in a pan with 1 tablespoon oil like shown above  and keep aside after you get nice aroma. Don’t burn the spices.Â

Now in the same pan, fry sliced onions and 2-3 cut garlic pieces, fry for 2-3 minutes and add coconut after onions change the color. Fry on medium heat until coconut changes color to brown.Â
Let the mixture cool down. After the mixture is cooled properly, grind this fried coconut mixture along with fried garam masala and tamarind. keep for later use.Â
Pressure cook the marinated goat meat upto 7-8 whistles. If you don’t want to make use of pressure cooker, then cook it for at least 1 hour or until the meat gets tender, checking it in between. Don’t make use of water, as mutton or goat meat looses water while cooking.
Once the mutton is fully cooked, and the full pressure is release from the pressure cooker, add the above gravy into it and boil it for 7-8 minutes. Add salt according to the taste.Â
And there it is ready to be served.Â
This goat curry or mutton can be eaten with roti, paratha, naan or even rice.
