Goan Rosatle Fov / Beaten Rice with Coconut Milk
In Goa(India), we celebrate Diwali by preparing different types of Poha( Beaten rice) recipes like dudatle fov ( Beaten rice in milk just like kheer), Takatle fov( Beaten rice in butter milk), Batata fov ( Tempered beaten rice and potatoes) and many more.
Today I am going to show you how to prepare Poha( Beaten rice) in Coconut milk for what we call it, Rosatle Fov. Ros meaning coconut milk and fov is beaten rice.
Yields: 4 Small Bowls
Time: 25Â Minutes
Ingredients:
- 2 Cups Coconut Milk(Thick)
- 1/4 Cup Jaggery
- 3/4 Cup Thick Red Poha/Beaten Rice
- 1 Teaspoon Cardamom powder
Method:
Wash the Red Poha shown above, 2-3 times and take it in a vessel.
Add jaggery and 1/2 cup water and cook on medium heat for a minute or until jaggery is all dissolved.
Add coconut milk and stir well.
Let it come to boil .
Will take about 2 minutes.
Switch off the stove and add cardamom powder.
Give it some standing time till coconut milk gets nicely absorbed in poha.
After about 15 minutes, you will see it thickened up.
Either serve your Poha as it is or chill and then serve.
