Moist Vanilla Coffee cake With Egg White Frosting
One of the all time dessert  in our home is homemade moist vanilla sponge cake, which you can enjoy with your evening Tea and  is quick and super easy .Â
One of the important thing which makes cakes the best and moist is the correct amount of time it is baked and the correct measurement of ingredients, otherwise they end up dry.
Lot of modifications can be done to this basic vanilla cake, by adding flavors of your choice. Most of the time, I use chocolate for my cakes, but this time , thought of making coffee vanilla cake , which believe me, came out super soft and super delicious.
For frosting , instead of butter cream, I used egg whites. Egg whites are whipped and then boiling sugar syrup is added slowly in it, to give it complete white look and smooth creamy texture.
You can also make cupcakes with the same recipe ,which are good for small occasions like kid’s parties or small get together.

Ingredients for Cake:
- 1 Cup (125 Grams) All Purpose Flour
- 1 Teaspoon Baking Powder
- 1/4 Teaspoon Salt
- 3 Tablespoons Instant Coffee Powder
- 1/2 Cup(63 Grams) White Granulated Sugar
- 1 Large Egg + 1 Egg Yolk
- Â 1/2 Teaspoon Vanilla Essence
- 1/2 Cup(118 Ml)Whole Milk
- 1/2 Cup(118 ml) Oil
Ingredients for Frosting:
- 2 Large Egg Whites
- 1/2 Cup(63 Grams) White Granulated Sugar
- 1/4 Cup water
- 1/8 Teaspoon Salt
- 3-4 Drops Vanilla Essence
Method for Moist Vanilla Coffee Cake:
Preheat  Oven to 400 degree Fahrenheit.
Sift together All Purpose Flour, baking powder, salt  and coffee powder together and keep aside.
In a big bowl, with electric hand mixer, beat oil and sugar.
Once the sugar is incorporated well, add 1 egg at a time and keep beating till everything is mixed well.
Add Vanilla essence and milk.
Beat on medium high  for a minute.
Do not overbeat.
Cut and fold all the dry ingredients kept aside , till the batter is smooth.
Pour the batter in 2 different greased round baking pans and bake for 15-20 minutes or until toothpick comes out clean when inserted in the middle of each cake.
Remove out and keep on cooling rack to cool down completely.
Method for Easy Egg White Frosting:
Beat the egg whites until foamy and thick.
Don’t wait till the peaks are formed.
Combine sugar , water and salt in a saucepan.
Bring to boil stirring frequently.
Once sugar is dissolved completely, boil the syrup undisturbed for more 2 minutes.
Start beating egg whites and immediately pour boiling syrup in egg whites in a slow stream beating all the while.
As you beat, mixture will thicken up forming soft peaks. ( Keep in mind that the peaks won’t be stiff , but soft)
This will take around 10 minutes.
At this point, add vanilla essence and continue for few seconds.
Arrange some silver foils on a plate where cake will be assembled. This is to avoid mess after the frosting.
Keep one cake on the foil and add some frosting. spread evenly.
Place other cake on top and pour remaining frosting on top.
Cover the top and sides of the cake and then give some texture by gently pressing spatula on  the frosting.
