Til Ke Ladoo/Til Gud Laddu/Sesame Seed Sweet
Indian name for ball shaped sweet is laddo and they can be made with various ingredients from different flours to different nuts  and grains.Â
Sesame seeds are called as ellu in kannada ,nuvvulu in telugu, and til in hindi. Til laddoos are prepared in Maharashtra during Sankranti festival. Sankranti comes in winter season, and eating Tilgul is an healthy option in this season. It gives you energy. Til or Sesame seeds are rich in proteins, calcium, mgnesium, zinc and phosphorous. In Combination with gur(Jaggery) which is unrefined whole cane sugar, it becomes all the more good option for those having deficiency of iron and calcium , because jaggery also has iron.Â
Peanut powder or crushed Cashew Nuts can also be added to this recipe for extra nutty flavor.
Some people prepare these ladoos, by grinding Roasted sesame seeds, instead of using them as a whole.
Yields: 50 Ladoo
Preparation Time: 10 Mins
Cooking Time: 10 Miins
Assembling Time: 10 Mins
Total Time: 30 Mins
Ingredients:
- 2 Cups White Sesame Seeds
- 120 Grams Soft Jaggery(Gud) or Hard jaggery broken into small pieces
- 1 Tablespoon Ghee/Clarified Butter
- 1/2 Teaspoon Cardamom Powder
- 1/4 Cup Water
Method:
Dry roast Til(sesame seeds) on a skillet on medium heat until they are lightly browned. Will take approximately 2 minutes.
Remove in a bowl and keep aside to cool.
In a heavy bottom cooking pot, pour in water and jaggery and melt jaggery completely, stirring well.
Let it cook until jaggery thickens up and  reaches the consistency to add til.
You can test it by dropping thickened syrup drop in cold water in a bowl. If you could make a small ball out of it, or it hardens  up, without getting diluted with water, the jaggery has reached the correct consistency.
At this point, add ghee, cardamom and roasted til seeds in jaggery syrup.
Switch off the flame
Remove it on a plate greased with ghee.
Let it cool down for 2 minutes. Don’t allow to cool completely otherwise you wont be able to shape up Laddus.
If you do not wish to make ladoos, then you can also make barfi by spreading it nicely on that plate and then cutting in square shapes .
Grease your palms with ghee.
Grease your palms with ghee.
Take a little of this til mixture (enough to make 1/2 the golf ball  size) on you palm and shape up the ladoos.
Repeat for all.
Let them cool down completely and then store in air tight container.
They last longer  for months.
