Nachni Satv / Ragi Pudding
Ragi or Nachni , also called as finger millet is a cost-effective source of iron, calcium , fibre and proteins. It can be consumed by grinding into flour and making bhakri, dosa, dhokla, also by mixing into chapati flour.
Today , let us prepare one of the easiest ragi recipes called  nachni satva.
Originally it is prepared using whole ragi. Â Ragi or nachni is first soaked in water over night and then ground with grated coconut using some water . It is then strained using strainer and then cooked with jaggery .
In my recipe, instead of whole ragi, I have used ragi flour. So let’s see how to prepare this delicious , nutritious and quick pudding.
It can be consumed as breakfast specially for kids , as it keeps to full and energetic for the rest of the day or as a dessert or snack.

Ingredients:
- 1 Cup ( 128 Grams) Ragi Flour
- 1 Cup (225 Ml) Coconut Milk from 3/4th cup freshly grated coconut
- Jaggery as per sweetness
- Handful Cashew Nuts
- 1 Teaspoon cardamom powder
- Ghee / Clarified butter for greasing a pan
- Pinch of salt
Method:
Grease a pan with ghee.
Take ragi flour in a bowl.
Add 2 cups water and let it stand for 1/2 an hour.
After half an hour, you will see black pieces of peels floating on water.
Decant it by pouring out the water slowly .
Again pour 2 cups of water and repeat the process till you see all the black pieces out .
Use the flour sitting at the bottom for satv.
Pour it in the heavy bottom vessel.
Add jaggery,coconut milk and salt. Mix well.
Keep it on low heat with constant stirring.
It will soon start thickening up.
Add Cashew Nuts,pinch of salt and mix really well.
Once it thickens completely and changes color, immediately transfer it into greased pan. Keep it for cooling.
Once it cools down, cut them into square or diamond shapes. And you are ready to eat your delicious ragi pudding or nachni satv.

Does the consistency depend on type ragi grain as they differ in colour (reddish brown to dark grey or blackish).
Nope . Just the color depends upon grain color.
